The Winter Olympics wrapped up yesterday, and once again Norway finished at the top of the medal table. 🇳🇴🥇 It’s always remarkable to watch such a small country compete so fiercely and gracefully on the world stage.

But here’s something you might not know:

Norwegian athletes are famously particular about their bread.

They’re traditionally enjoyed right before Lent begins and are such a cozy Scandinavian treat for late winter.

🇫🇮 Finnish Salmon Soup (Lohikeitto) 🇫🇮

During my recent trip to Finland, I kept finding my way back to bowls of lohikeitto, a simple, comforting salmon soup enjoyed in food market halls alongside locals, surrounded by fresh fish and the gentle hum of everyday life.

I came home inspired to recreate that experience, and today I’m sharing my version of Finnish Salmon Soup on the blog. It’s creamy yet light, made with tender chunks of salmon, potatoes, carrots, and plenty of fresh dill. Cozy, nourishing, and wonderfully unfussy.
