What exactly is a FlavoDiet? And why are we suddenly hearing so much about flavonoids?

Researchers use the term "Flavo-diet" to describe eating plenty of flavonoid-rich foods, including cacao, tea, berries, apples and oranges.

Scientists are studying them in connection with something I care deeply about: healthspan.

Not simply how long we live, but how well we live. Staying physically stronger, mentally healthier and more resilient as we get older.

One large healthy-aging study caught my attention:
β€’ More than 86,000 adults aged 60+ were followed.
β€’ Women with the highest Flavodiet scores had a 15% lower risk of frailty.
β€’ They also had a 12% lower risk of impaired physical function.
β€’ And a 12% lower risk of poor mental health.

Now here's where cacao comes in. 🍫

Flavonoids are a big family of naturally occurring plant compounds. Flavanols are an important branch of that family.

And our SuperFood Cacao beans are exceptionally rich in naturally occurring Flavanols, in fact, the #1 richest of all nutrients or foods.

I thought blueberries were the antioxidant SuperFood. 🫐 Most of us have also heard about green tea and red wine.

Chocolate was supposed to be a guilty pleasure. The more I learned about flavanols, the more I realized cacao was a true
SuperFood that had been hiding in plain sight.

That discovery changed the kind of chocolate company I wanted to build.

I didn't simply want to remove sugar. I wanted to protect more of the extraordinary goodness already inside the cacao bean.

Because if Mother Nature put all that goodness inside the bean, why would we deliberately take it out?
Alkalization, also called "Dutch processing," can strip away up to 90% of those flavanols. All of that goodness, gone. Just to make a bar darker and smoother.

We chose the harder way: Single-origin Peru. Farm-to-bar with careful control of heat and processing, designed to preserve more of cacao's naturally occurring antioxidants and flavanols.

Why is chocolate bitter? πŸ€” Can you not have much less bitterness yet also be healthy? Why must we compromise?

We now know that fresh cacao beans do NOT taste like chocolate. Not even close. 😳

You crack open that gorgeous pod, taste the sweet white pulp, and then the beans … they don't taste chocolatey, nope. ❌ Not even close.

Raw cacao is bitter AND astringent:
πŸ‘… Bitterness is a taste.
😬 Astringency is that dry, puckering feeling in your mouth.

Fresh cacao has plenty of both. Here's the twist.

Some of the compounds behind that bitterness and astringency are also part of cacao's SuperFood reputation: The Flavanols. The Polyphenols. 🌱 The Antioxidants. A ton of them too...

So the challenge of making great-tasting, not bitter, chocolate isn't simply "remove the bitterness."

It's this:
=> How do you tame an intensely bitter, astringent seed… without stripping away what makes it extraordinary in the first place? 🍫

That's the tension every chocolate maker has to solve for 200+ years:

🌿 Fermentation is the first big transformation. Wild yeasts and bacteria get to work. Some of that harshness begins to fade, while the building blocks of chocolate's flavour start developing.

In one study comparing commercial cocoa powders, researchers found average total flavanol levels of:

🍫 Natural cocoa powder: 34.6 mg/g
🍫 Heavily alkalized cocoa powder: just 3.9 mg/g

YES... That's almost 90% less. πŸ“‰

The exact amount varies depending on the cacao and how heavily it is processed.

But the direction is clear: heavier alkalization can mean substantially fewer Flavanols.

And many consumers, like me, want creamy and loaded with all the healthy antioxidants.

So now we know: bitterness alone doesn't automatically mean "healthier." πŸ™…β€β™€οΈ The science is more nuanced than that.

In the past, bitterness meant "healthier," and creamy milk meant loaded with bad stuff, overly processed, and "feel guilty."

At 13, I played baseball. Second base. Boys' league. Got people talking. Of course, I was the only girl on the team. Rick played too, first base. We were the Montreal Little League team "with a girl" / "avec une fille".

Well, this weekend, Maybelle Blair was a big deal. She's 99.

She threw the first pitch at the brand new Women's Pro Baseball League. And I had little goosebumps and watery eyes watching all the tik toks…. πŸ₯Ή

Maybelle played pro in 1948. Rockford Peaches: the real team behind A League of Their Own.

But then 1954. League folded. Zero pro baseball for women. For 70 years. πŸ’”

An entire lifetime of no pro league. Little girls dreaming of playing pro ball with literally nowhere to go β€œwhen they grow up”.

No Olympics, no Pro league. Not in Canada, not anywhere in the world. For 70 years.

This weekend, that ended. Finally. A long overdue new league officially launched. And Maybelle, one of the last living players from the original one, right there passing the torch.

Took me straight back to that summer. Second base. Rick beside me. I got to play that summer but not dream of anything more!

Well, well, well: that struck a nerve yesterday πŸ‘€

For 10 years here on LinkedIn, I’ve been "Smiling Suzie". Lifting people up. Rising above. Staying positive. πŸ™‚

Problems? NP, I double down, suck it up, fix them and next.

Partly because I'm a hardcore fighter of a Gen X. Partly because my childhood instilled a ton of resilience in me. And partly because I'm a fixer (not a whiner).

So yesterday was unusual: I shared the real stuff behind "I love what I'm building, but I sure don't love my job right now."

Because being a quasi-solopreneur, with a super-small team, now owning a small factory, early in a Start-up Lifecycle (relatively), is TOUGH... and "not always fun". πŸ˜…

Before the millions in Revenue pour in, before you can hire a large team, before vendors rush to get your business, before the big, brand-building campaigns.

We see it every day in our Founders Helping Founders -Suzie group daily:
➑️ More surprise deductions!!
➑️ They cancelled the PO....
➑️ We called and emailed 40 times...still nothing
➑️ The vendor messed up... yet blaming us of course πŸ™ƒ
➑️ They said they'd list us... but got bumped..
➑️ We're out of money. Again..

CPG start-ups. The list goes on.

Every year, new CPG Founders in Canada get excited about a product idea and take the leap.

Also, more than many quietly disappear.

The gap between a great idea and a sustainable brand and business is bigger than anyone tells you (my son had an idea 3 years ago.. I said "WAIT")

Nope, we can't spend every day dumping on LinkedIn as that won't build the company.

But pretending it's all glorious doesn't help anyone either πŸ™…β€β™€οΈ

Part of the solution is Community. This work gets lonely. My tips :

🫢 Join a founder group, ideally a free one. Find people who'll tell you the truth, share what they know and answer when everything hits the fan.

🫢 We also need the Triple support:
1️⃣ πŸ‡¨πŸ‡¦ Retailers supporting Made-in-Canada and Canadian-owned brandsπŸ‡¨πŸ‡¦
2️⃣ πŸ‡¨πŸ‡¦ Consumers deliberately buying Canadian πŸ‡¨πŸ‡¦
3️⃣ πŸ‡¨πŸ‡¦ Funding and government programs small Canadian businesses can actually access and useπŸ‡¨πŸ‡¦

That little edge matters. πŸ‡¨πŸ‡¦ Especially as tariffs shut down US scale and Revenues.

So today, on this gorgeous Ontario long weekend, I'm taking the small win that mattered this week: people on the internet made me feel less alone in the unglamorous part of being a CPG founder. πŸ™Œ

Should I actually post my real answer, or just fake it on the internet?

People ask me how I am. "All good," I say.

Not entirely true. I love what I'm building. I don't love my job right now.

Here goes. Two reasons.

🍫 First, integration and back-office grunt work.
Eight months drowning in it.. so far away from my Super Power of Brand Building. Hate every minute I need to hand-hold this. But I do or not done.. Sigh.

➑️ Buying a factory
➑️ Fishbowl integration...
➑️ New QuickBooks and nothing synchs! Again and again! No month-end P&Ls.. again!!
➑️ Integrating a 30-year-old Heritage brand
➑️ Forms. More forms. Calls. Portals. Delays. Runarounds. Nothing works the first time. You just suck it up and follow up for the 30th time. Literally 50 emails to change a bank account. Not kidding.

Ugh. 😫 Everything feels "so hard" right now.

Yeah, I'm whining.
Our CPG Founders' jobs are not "glorious" often. Especially at the beginning anyway.

🍫 Second, harder to admit: no hero, fast-turning SKUs yet.
Our vitamins and pure chocolate bars with protein are innovative, first to market, yet, niche and early. Need "education", education takes time. Awareness & Trial. Ross is heritage, yet has the same issues of awareness.

I want lightning-fast HERO SKUs that turn, and we light up the META, Amazon and DTC ads. Go go and fuel more growth.

So I spent the last 6 months deep back into my 4 Ps.

What's missing? What aren't we seeing? What do consumers want? The market need? Retailer feedback. Consumer feedback. Concept research. SEO analysis. Amazon research. Round I. Round II. Round III. Hit a wall, go back. More questions.

Not the exhilarating part of building a brand. I've been growing brands for 35 years, so I'm not new to this.

And with Love Good Fats, our first two SKUs were lightning in a bottle. #1 and #2 in the natural-bar category at Canada's biggest banners. Overnight. Pure joy. πŸ™Œ $8 million in 12 months. We hired a whole team. Launched 16 more SKUs. Then $47 million the next 12. Phenomenal energy.

But that was the exception.

The norm is the 10-year "overnight success." Tiny purchase orders. Small e-commerce days with crappy ROAS. Fixed costs all over. Grind.

Well, well, well. The work paid off: we're launching 8 new skus including our 4 HERO skus in pure chocolate bars.

What the heck is a "Spectra," and why is it filled with chocolate? 🫘

Well, well, well... welcome to our R&D kitchen. 🍫

For the past four weeks, our team has been go, go, go, formulating and developing recipes for a potential client.
And they're loving the samples. In fact, they want even more options now.

Woot! πŸŽ‰
Creamy. Delicious. Organic. Fair trade. No alkali-soaking, i.e., never Dutch-processed.

And yes, even some FUNCTIONAL chocolate, with added Protein, Pre-biotic Fibre, Adaptogens of course, and a few other super-secret wicked ingredients. πŸ”₯

I'm becoming pretty darn good at infusing chocolate with the right functional ingredients while also enhancing the indulgent experience that makes chocolate chocolate.
A few years ago, I had a joint venture in Ecuador. The R&D team had already worked on more than 500 recipes. And since then, I've worked with three additional facilities on more than 500 others.

Yup. More than 1,000 recipes, and still counting. βœ…

OK, back to the samples: Someone asked me: "How do you actually make these samples by hand?"
Here's how πŸ‘‡
1️⃣ We formulate. That's Secret Weapon number one. Create something that tastes truly indulgent while delivering on the specs and macros. Both an art and a science.
2️⃣ We hit the kitchen. Measure, measure, measure. Then mix, mix, mix.
3️⃣ We obsess over the ingredients. You simply cannot make extraordinary chocolate from "ordinary" ingredients.
4️⃣ Into the Spectra it goes. Technically, it's a STONE-MELANGER. Two granite wheels slowly grind, mix and refine the ingredients until they become silky, smooth chocolate. It runs for at least 24 hours. πŸ”₯
Tiny changes make a BIG difference. A little more refining time, or a small change in temperature or ingredients, can alter the flavour, texture, aroma and flow.
5️⃣ Then we Temper. We carefully heat and cool the chocolate to create the right cocoa-butter crystal structure.
That's what gives properly tempered chocolate its beautiful shine, satisfying snap and smooth melt.
6️⃣ Mould it. Cool it. Super easy peasy part.
Finally, we taste. 🍫 This is where chocolate becomes a full sensory experience.
First, you hear that beautiful, clean snap. Then the chocolate touches your tongue and begins to melt close to body temperature. The cocoa butter releases the flavour and aromatic compounds that were locked inside. oh so Melt-in-your-mouth delicious!

The SuperFood Cacao Bean Series #4 🍫🫘

I thought the "most important" part was over once the beans were grown, picked and left the farm.

No, no, no! I was wrong.

The key to flavour and taste is, in large part, what happens AFTER the beans are picked.

So after Otto and Jenny's farm, we drove to a small community fermentation centre to meet Neil. He spends his days overseeing one of the most important parts of making great chocolate.

First: Fermentation.

Simple. Old wooden boxes and burlap sacks. That's it?

Neil walked me through it.

The freshly picked beans, still covered in that sweet white pulp, go into wooden boxes. They're layered with burlap sacks, at least two or three deep, to trap the heat.
Then... you wait. For five days.

Every single day, someone comes and stirs the beans. Moving them from one box to the next. Checking the temperature.

The temperature is key! "How hot does it actually get in there?" I asked. "Up to 50 degrees." I wasn't expecting that. It's basically cooking itself from the inside.

Then Neil told me something that completely surprised me: This is where the beans develop much of their flavour.

Even before they're dried, roasted or conched. Right here. In the simple wooden box.

If fermentation isn't done properly, many manufacturers try to correct the flavour later by soaking the beans in alkali. Sure, it's faster.

But it destroys over 80% of the naturally occurring flavanols that make the SuperFood cacao bean such a nutritional powerhouse, bursting with antioxidants.

The SuperFood Cacao Bean Series #3 🍫🫘

I thought I was going to visit a cacao farm. I was wrong.

After landing in Manta, we drove almost three hours into the heart of the farms and spent the day with Otto and Jenny.

They've been growing cacao in the backyard of their home for over 45 years.

When we pulled into their driveway, I was looking for rows and rows of cacao trees. You know... "a farm"? no? 🌱
Instead, I saw their home. Where they raised their two kids (who recently moved out). A few small buildings. Four dogs running around. Ducks. Chickens. And fruits and flowers everywhere.

Then Otto started walking. "Here's our avocado tree" (in Spanish ofc)

A few steps later, mango, coconuts, bananas, plantains, lemons, oranges, mandarins and massive grapefruits, watermelon and the best, purple peanuts! πŸ’œπŸ₯œ

Every few steps there was something new to discover.

Then he'd point to another cacao tree, almost hidden among everything else.

This was the cacao farm. ❀️

Not neat rows, or giant fields.

Just an incredible "backyard" garden where cacao grows alongside 18 different fruits, flowers and towering trees.

Cacao naturally grows beneath taller trees. The shade protects it, while the surrounding plants create a rich ecosystem where cacao thrives.

It completely changed what I thought a cacao farm looked like.

There are certainly larger commercial cacao farms. But the small family farms I visited looked nothing like I had imagined.
