Miss Dolly gave us the tiniest most perfect heifer calf yesterday morning! Both mom and baby are doing well and weathering this winter storm like champs. Best of all Dolly is back in milk!!!

CHOCOLATE PEPPERMINT SOURDOUGH!
You definitely need to add this to your holiday baking list!
125g active starter
25g coconut sugar
25g cocoa powder
325g flour
285g water
1tsp peppermint extract
7g salt
Mix all ingredients. After 30 mins preform a series of stretch and folds repeat every 30 minutes for 2 hours. (This is a high hydration dough it will feel wet) Allow dough to bulk ferment on counter for 6 hours(ish) or in the refrigerator overnight.
Shape and incorporate 2 crushed candy canes and about 1 handful white chocolate chips then let proof in a banneton basket
Bake
Preheat oven 500 with Dutch oven inside
Score dough and place into Dutch oven with lid on for 20 mins, drop the temperature to 450
Remove lid drop oven temp to 425 and bake an additional 15 mins.

Dolly is not pleased that she got dried up over the weekend, and honestly I am not either! We now patiently wait for her baby to arrive in December!

August was a whirlwind!
-Mercedes had complications late pregnancy, luckily we saved her calf, Felix! But two days later said goodbye to her. 💔
-Aryana showed at county fair for a second time. Sold her goat, made memories, and simply kicked ass.
-Ryan and I found a new cow in milk! Had her shipped to Wyoming where we picked her up and brought her home! She has been a dream to milk and so much fun to be around. We get to milk her another month, but then she has to prepare for a new calf!
-Some how in the midst of the chaos we snuck away to the mountains to celebrate our 10 year anniversary!

Welcome to the world Felix. Unfortunately this wasn’t the calving we were hoping for. We are lucky that this little man is health and strong!
