🥞 Homemade Meat-Filled Crepes

Ingredients:

For the crepes:
• 2 eggs
• 2 cups (480 ml) milk
• 1 cup (125 g) all-purpose flour
• 1 tbsp vegetable oil
• 1 tbsp sugar
• 1/2 tsp salt

For the filling:
• 1 lb (450 g) ground beef
• 1 medium onion, finely chopped
• 2 tbsp vegetable oil
• 1 tsp salt
• 1/2 tsp black pepper
• Optional: fresh parsley or dill

Instructions:

1. In a large bowl, whisk together eggs, milk, sugar, salt, and oil. Gradually add flour and mix until smooth. Let the batter rest for 15–20 minutes.
2. Heat a non-stick skillet over medium heat. Pour a thin layer of batter into the pan and swirl to coat the bottom. Cook for 1–2 minutes per side until lightly golden. Repeat with the remaining batter.
3. For the filling, heat oil in a skillet. Sauté the onion until soft and golden. Add the ground beef, salt, and pepper. Cook until the meat is fully browned and cooked through.
4. Place 2–3 tablespoons of filling in the center of each crepe. Fold the sides and roll tightly.
5. Optional: Pan-fry the filled crepes in a little butter until crispy and golden on both sides.

Serve hot with sour cream, fresh herbs, or your favorite sauce.
