Double Chocolate Croissant
Sourdough Loaves
100g starter
20g cocoa powder
350g water
25g honey
10g salt
10g vanilla extract
500g flour
1 stick grated butter(split)
Chocolate chips
Bake mini loaves at 425 for 25 minutes uncovered.
Bake sandwich and round loaves at 425 for
30 minutes covered, and 400 for 15 minutes
uncovered or until internal temp reaches 200

Banana Pudding Cheesecake CRUST
2 ¼ cups (302g) vanilla wafer crumbs
5 tbsp (65g) sugar
10 tbsp (140g) salted butter
325 8-10 minutes
CHEESECAKE FILLING
24 oz cream cheese, room temperature
1 cup (207g) sugar
3 tbsp (24g) all-purpose flour
3.4 oz instant banana cream pudding mix, dry
1/4 cup (58g) sour cream
3 large eggs, room temperature
1/2 tsp vanilla extract
1 cup mashed ripe bananas (2–3 bananas)
300 for 1.5 hours should be set but still jiggly
TOPPING
1 ¼ cups (300ml) heavy whipping cream, cold
6 tbsp (43g) powdered sugar
1 tsp vanilla extract
2–3 medium sized bananas
11 vanilla wafer cookies, whole

Caramel Coffee Creamer
2 cups half and half
1 cup caramel
1/2 tsp vanilla extract
Dash of cinnamon
Dash of sea salt

Cherry Tomato Pasta Sauce
▢ 3 cups cherry tomatoes
▢ 1/2 cup olive oil
▢ salt and pepper to taste
▢ 1 whole onion sliced
▢ 4 cloves garlic minced
▢ 1 – 1/2 tsp Italian seasoning
▢ Fresh parsley and bay leaves
▢ 1/2 tsp red pepper flakes

Always add 2 tablespoons of
bottled lemon juice or 1/2
teaspoon of citric acid per
quart jar (1 tablespoon per
pint) to guarantee safe acidity
levels. Instructions: Place cherry tomatoes (whole) in a large sheet pan without overlapping. Drizzle with about 1/4 cup of olive oil, and season with salt and pepper to taste. Bake at 400F degrees for 45 minutes.
In a large dutch oven or heavy pot add remaining oil. When oil is hot add in onions and garlic, sautéing until soften and fragrant but not browned. Add oregano, red pepper flakes, roasted cherry tomatoes and bay leaves. Cook on low heat for 15-20 minutes. Taste the sauce and adjust seasoning if needed.
Remove bay leaves.
Transfer to a blender and process until sauce is creamy and there are no chunks left. Alternatively you can use an immersion blender.

380 grams filtered water
50 grams cocoa powder
50 grams peanut butter
50 grams honey
8 grams salt
450 grams all purpose flour

For mini loaves bake at 425 for
25 minutes or until internal
temp reaches 200

Strawberry Top Syrup Recipe

Strawberry Top Syrup 2 cups strawberry tops
3 cups water
1½ cups sugar
4 Tablespoons lemon juice ( if waterbath canning) Add all ingredients to a pot, bring to a boil and then lower to a simmer and cook for 20 minutes. Strain and then pour the strawberry liquid back into the pot, simmer for another 20 minutes or until it’s thickened to a syrup consistency. Put in a jar and refrigerate or waterbath can for 10 minutes.
