While we generally cook Picanha the traditional way, over an open flame. Today we went with smoking it and reverse sear. Highly recommend to change things up. Here’s how:

1. Season with your favorite steak rub. We recommend 2 Gringos Chupacabra or Kinder's Smoke at 250 until 125 ish.
3. Reverse sear until 130.
4. Rest for 5-10 minutes.
5. Slice and devour.

Take your left over smoked salmon and make an amazing salmon dip. Pickles, red onion, celery, habanero, mayo and lemon is all you need. The salmon already packs so much flavor. Pair it with your favorite crackers or even make a sandwich! Love it!

Smoked for 1 hr at 275. Light and delicious. Served with your favorite veggies. Left overs turned into an amazing smoked fish dip.
