I have always had a penchant to eat breakfast foods for dinner. When I was a kid, my Dad would travel for business, freeing up my Mom to get creative with feeding us kids an alternative evening meal.
We loved eating eggs, bacon or pancakes for dinner, so that childhood experience paints my adult preferences. Everyone has these kind of comfort food memories…right?
Here’s one of my go to’s when eating eggs for any meal.
Fried Egg Sandwich on GF Sourdough toast, melted Manchego cheese, a schmear of toum (grab the big tub of Toom brand at Costco…the Manchego too), a healthy heap of arugula, along with a couple locally sourced eggs (mahalo to O’Koa farms), sprinkle of sea salt & pepper, and bang…you’ve got a meal. The garlic-y spreadable deliciousness which is toum really makes this open-faced sand. Toum is a whipped raw garlic spread which packs a beautiful fresh garlic punch. Try it, you won’t regret it.
