Let's talk eggplant! We have the standard Black Beauties but we have others too. White eggplants are very mild and perfect for saute. There are stunning purple globes which are great for eggplant roulette. This year we have itty bitty Patio eggplants. We stuff the with hunks of cheese and garlic and slow cook them in tomatoes to make a delectable eggplant " gravy"
