🍞 SEPTEMBER BREAD CLASSES ARE OPEN! 🍞

September’s schedule is here! I’m keeping it simple this month with three of our bread classes, and I’ve tried to offer both a weekday and weekend option for each one.

🥖 Sourdough
• Saturday, September 5 | 1–4 PM
• Thursday, September 17 | 1–4 PM

🍞 Classic White Bread
• Sunday, September 6 | 3–6 PM
• Wednesday, September 9 | 1–4 PM

🌾 Fresh Milled Flour Bread
• Sunday, September 13 | 3–6 PM
• Wednesday, September 30 | 1–4 PM

$50 per person
$20 non-refundable deposit required to reserve your seat.

Classes are held in Pendleton, SC and are completely hands-on. You’ll learn the process from start to finish and leave ready to make it again at home.

✨ No experience needed — beginners are absolutely welcome!

Classes require a minimum of 3 participants to be held, and space is limited.

🍪 Okay Stipe Bread Co. friends… I need your opinion!

When you’re buying a GOOD homemade chocolate chip cookie, which one are you reaching for?

A. 🍪 Thick Bakery Style
Big, thick, loaded with chocolate, slightly crisp on the outside and soft in the middle.

B. 🤎 Large Soft & Gooey
That classic homemade cookie… big, soft, chewy and gooey with plenty of chocolate in every bite.

Let’s talk SCORING… and why this loaf busted. 🔪🍞

Not every loaf comes out picture perfect, and this one is actually a great example of why scoring matters.

See where this loaf busted open instead of expanding neatly through my score?

When sourdough hits a hot oven, it expands FAST. A good score creates an intentional weak point that gives all of that pressure somewhere to go.

If your score is too shallow, isn’t positioned well, or the dough has developed a skin that makes it harder to cut cleanly, the loaf may create its own escape route.

And that’s exactly what happened here.

It still tastes just as good, but aesthetically? She got a little wild. 😂

A good score should help control the oven spring and allow the loaf to open where you intended instead of busting wherever it pleases.

This is also why I tell my classes: don’t be scared of the blade. Make one clean, confident cut and commit to it.

Perfect loaf? Nope.

Perfect teaching loaf? Absolutely. 🍞

And honestly, I LOVE showing things like this because learning sourdough isn’t about producing an Instagram-perfect loaf every single time. It’s about learning to look at your bread and understand why it did what it did.

One thing I use constantly in my kitchen that doesn’t get talked about enough… a good bench scraper 👏🏻

If you bake sourdough, fresh milled breads, cookies, pizza dough, or honestly cook much at all, this little tool earns its keep DAILY.

I use mine for:
• Dividing dough
• Cleaning flour off counters fast
• Scooping chopped ingredients
• Moving sticky dough without making a mess
• Keeping my workspace clean during classes

It’s one of those “I didn’t know I needed this until I had it” kitchen tools 🤍

One kitchen item I use almost daily that I don’t think gets talked about enough…

Silicone proofing baskets. 🙌🏼

I still love traditional bannetons, but these have become one of my favorite tools for everyday baking because:
• they’re easy to clean
• dough releases beautifully
• no mold worries
• dishwasher safe
• perfect for beginners learning sourdough

If you’ve ever struggled with sticky dough or cleaning flour out of baskets, these are worth trying.

Honestly one of those little kitchen swaps that just makes baking easier.

One of my most used tools in my kitchen is my loaf pan

This is the exact style I use when making my soft white sandwich bread and it gives such a good shape and even bake every time

One thing I reach for every single bake day is my 2 cup metal measuring cup 👏

It makes measuring so much easier when I’m working with multiple cups of wheat berries or flour. I’m not constantly refilling a smaller cup or guessing, it just keeps things moving.

I use it every time I’m baking, especially on busy prep days or when I’ve got multiple loaves going.

Simple, but one of those tools that just makes life easier in the kitchen.
