Spice up your next gathering with these amazing meatballs. Try them as an appetizer, made into sliders or atop rice.

Ingredients
Meatballs
1 pound ground turkey
3 green onions, minced
2 tablespoons minced garlic
1 tablespoon minced ginger
1 egg, lightly beaten
1/2 cup panko breadcrumbs
2 tablespoons Sriracha
1 teaspoon tamari
1/2 teaspoon ground white pepper
1 teaspoon sesame oil
Glaze
1/3 cup apricot preserves
1 to 2 tablespoons Sriracha
1 1/2 tablespoons rice vinegar
1 tablespoon tamari
1 tablespoon sesame oil

Preparation
1) Preheat oven to 375°F.
2) In large bowl, gently combine all meatball ingredients until everything is evenly distributed. Form mixture into small balls, using 1 to 1 1/2 tablespoons of meat per ball. Place the meatballs onto a rimmed baking tray and into the oven. Bake for 10 minutes and turn the meatballs. Bake for another 10 minutes until cooked through.
3) While the meatballs bake, combine all glaze ingredients in a small pot. Whisk and cook over medium heat for 5 minutes or until mixture is slightly thickened. To serve, toss or brush meatballs with warm glaze.

Serving Suggestion
Served whole and garnished with sliced green onion or toasted sesame seeds on an appetizer platter or made into sliders, these meatballs really bring the heat if you double the amount of ginger and Sriracha in the mix. Make it a meal by serving the meatballs on a bed of steaming hot jasmine rice.

Buy a large watermelon and use part of it to make this easy pudding parfait. Chia seeds thicken the sweet watermelon puree and add minerals, omega-3 fatty acids, fiber and antioxidants. Creamy vanilla yogurt makes the parfait into a protein-rich treat.

Ingredients
4 cups seedless watermelon, cubed
1/2 cup chia seeds
2 tablespoons honey
1 tablespoon lemon juice
1 1/2 cups vanilla yogurt
1 1/2 cups fresh raspberries
Mint sprigs, for garnish

Preparation
1) Put the watermelon cubes in a blender container and blend until smooth. Add chia seeds, honey and lemon and pulse until mixed. Transfer to a storage container and refrigerate until thickened, about an hour.
2) In six 8-ounce juice glasses or wine goblets, measure ¼ cup of the watermelon mixture, then top each with ¼ cup of yogurt and ¼ cup of watermelon, then top with ¼ cup raspberries.
3) Garnish with mint and serve.

Serving Suggestion
Serve for breakfast on a hot summer morning or as a refreshing snack. Try using Greek yogurt for an extra protein boost.

Looking for a fun dinner idea? Try this fun recipe Sheet Pan Tofu Ramen with Veggies.

Ingredients
4 2.8 oz. packages ramen
2 tablespoons sesame oil, divided
3 tablespoons soy sauce, divided
1 package extra firm tofu, drained
1 tablespoon maple syrup
2 tablespoons creamy peanut butter
2 cloves garlic, pressed
1 tablespoon canola oil
4 cups cabbage, thinly sliced
1 large carrot, finely julienned
1 pinch salt
1/2 cup cilantro leaves

Preparation
1) Preheat the oven to 450 degrees F. Bring a pot of water to a boil. Open the ramen and save the seasoning packets for another use. Place the ramen in a large bowl and pour the boiling water over the noodles. Let stand for five minutes, then drain. Drizzle 1 tablespoon sesame oil and 1 tablespoon soy sauce on the ramen and toss to coat. Spread on a half-sheet pan.
2) lice the tofu into ¼-inch-thick slabs and blot dry with a kitchen towel.
In a medium bowl, stir 1 tablespoon sesame oil, 2 tablespoons of soy sauce, maple syrup, peanut butter and garlic. Dip the tofu slices one at a time into the peanut butter mixture to coat, then place on the sheet pan, moving the noodles aside so the tofu makes contact with the pan. If there is any marinade left, drizzle it on top. Bake on the bottom rack for 15 minutes.
3) Toss the carrots and cabbage with canola oil and salt, and spread on the hot ramen in the sheet pan, bake for 5 minutes. Serve individual portions of noodles and vegetables in bowls, topped with the tofu and cilantro.

Everybody loves blueberries, especially when they are bubbling under a blanket of tender, sweet biscuits. Easier to make than pie, but just as appealing, cobbler is a classic homestyle fruit dessert.

Ingredients
1 stick unsalted butter, plus a sliver for greasing
6 cups blueberries, washed and drained
1 cup sugar, divided
1/2 cup all-purpose flour
1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs, lightly beaten
1/2 teaspoon vanilla

Preparation
1) Preheat the oven to 375 F. Use a sliver of butter to grease a 2-quart baking dish.
2) In the baking dish, combine the blueberries and and toss gently to mix.
3) In a large bowl, combine the all-purpose flour, pastry flour, remaining ¼ cup of sugar, baking powder and salt, and mix well.
4) Use the coarse holes of a grater to shred the butter into the bowl, tossing the shreds to coat with flour.
5) Stir in the eggs and vanilla. When a dough forms, scoop 1 tablespoon-sized portions of dough and place them evenly over the berries, leaving a little space between scoops.
6) Bake for 40-45 minutes, until the berries are bubbling and the topping is golden brown. Use a toothpick to test the topping for doneness; it should come out with no wet batter attached.
