    •    Bayten 🇿🇦 Hailing from the cool-climate slopes of Constantia, South Africa. This bone-dry standout brings an amazing balance of zesty passion fruit, lime, and crisp herbal notes with a chalky edge.

    •    Prisma 🇨🇱 A vibrant, sustainably farmed favorite from Chile’s coastal Casablanca Valley. It bursts out of the glass with tropical mango, passion fruit, and a punch of crisp citrus leaf.

✨ Mundo Revés ‘Le Petit Voyage’ Pét-Nat Rosé
Kick off the trip with some bubbles! This "Little Voyage" is a wild, unfiltered sparkler made from ancient Criolla vines. Expect hazy pink hues and juicy notes of wild strawberry and watermelon rind. It’s raw, energetic, and pure summer fun in a glass.
🌊 Wapisa Sauvignon Blanc
Forget what you know about Argentinian whites. Coming from the only coastal winery in Patagonia, this wine is literally kissed by the sea. It’s zesty and bright with pink grapefruit and lime, finished with a unique saline minerality from those Atlantic breezes.
⛰️ Andeluna Malbec
We couldn't visit Argentina without the king! Grown 1,300 meters above sea level in the rocky soils of the Uco Valley, this Malbec is all about elegance. Think velvet-smooth tannins, floral violets, and deep layers of blackberry and plum.

One of my favorite week’s of the year -
I am popping the corks on some effervescent, elegant, and beautifully crafted bubbles this week. Welcome to our Sparkling Wine Edition, a guided journey through three distinct European regions where bubbles have history.
In a world where sparkling wine is often saved for a single toast, these selections prove that bubbles deserve a seat at the table every day. We’re exploring the diversity of method and terroir: from the ancient hills of Limoux to the glacial soils of Valdobbiadene and the long-aged complexity of Penedès.
On the tasting table:
🍾 The French Ancestor: Famille Antech Cuvée Françoise
100% Mauzac from Limoux, this selection arrives from the true birthplace of sparkling wine. With 30 months of lees aging, it is a refined, organic dream that pairs perfectly with French Salt Cod.

Step into the filtered light of our 111 year old windows! It is time to settle the great debate of the week.

I must say, your olfactory faculties are truly impressive. Several guests got two out of the three aromas correct. Others may have indulged their imaginative relationship with your spice racks, but there is always next week.

For now, the mystery must be solved.

1. Mushroom: The telltale sign of an earthy wine, aromas of mushroom are common in Burgundy, Piedmont, and the tantalizing dessert wines that succumb to the noble rot.

2. Lime: Here in Florida, there is no shortage of appropriate moments for a limey wine. Whether on the beach or picnicking in the shade, Gruner Veltliner, Albariño, and Vinho Verde offer tart, refreshing options to pair with fun and bathing suits.

3. Almond: Sometimes we all get a little bit nutty. For a sophisticated and intriguing experience, turn to Rhône Valley and Italian white wines.
