One of the most important parts of making tamales is getting that masa just right. 🫔❤️ This is the stage where I’m spreading the masa onto each softened corn husk, getting them ready to be filled, folded, and steamed.

For my tamale masa, I use masa harina, warm broth, lard, baking powder, and salt. I like to beat the lard first until it’s light and fluffy, then slowly mix in the masa and broth until the dough is soft, spreadable, and almost fluffy in texture.

A simple starting ratio is:

4 cups masa harina
3 to 3½ cups warm chicken or pork broth
1½ cups lard
2 teaspoons baking powder
1½ teaspoons salt, or to taste

Add the broth gradually because every masa can be a little different. You want it soft enough to spread easily over the corn husk without being runny.

And don’t forget the float test! 🫶🏼 Take a small piece of prepared masa and drop it into a cup of cold water. If it floats, that usually means you’ve whipped enough air into the masa and it’s ready to use. If it sinks, keep mixing it a little longer and test again.

Then comes my favorite part—spreading the masa, adding the filling, folding each tamale, and watching a whole batch come together. There’s something so special about making tamales from scratch. It takes a little time, but every single one is made with love. ❤️🫔

There’s just something about making tamales from scratch that feels like tradition, family, and love all wrapped into one. ❤️

Once that masa is mixed just right, it’s time for one of my favorite parts—filling each tamale with all that delicious goodness. I love taking my time with this step because every tamale is made by hand, one by one, and you can truly taste the love that goes into them.

Homemade tamales may take a little extra time, but that first bite makes every minute worth it. 🫔✨

So a huge exciting update we are doing! Because I’ve been in chef school my husband is putting in this gorgeous Wolf stove in this area in my kitchen. I can not wait! Kitchen is going to be a mess for a bit, but will be well worth the end result! I can’t wait to start making cooking videos on my new stove.
