Metzbean in the lab doing a little roasting. Restocking my favorite Ethiopian for daily consumption as well as revisiting an interesting Honduras anaerobic. Last time it didnt quite deliver the fruitiness expected for a fermented coffee, so will try to roast it a bit differently this time.

Brewed some delicious espresso this morning. Second sampling of burundi mutana natural. That is a natural processed coffee at the processing station known as mutana in the country of burundi.

What makes this espresso so good is that it is the 3rd day after roasting and the second attempt at brewing. The flavor changes as the coffee rests and the biggest changes happen in the first few days. As for the second brew, I get to adjust parameters to dial in the shot. I like a long lever machine profile to get the most flavor and complexity out of the coffee. A traditional shot is 30seconds at 9bar and this is sloped pressure at 50s.
