These Street Corn Chili Nachos are perfect for Cinco de Mayo or honestly any Tuesday that needs saving 🌽

These come together in just a few minutes and disappear even faster. Pair with our enchiladas, burritos, or bowls for a full fiesta!

Here's what you need 👇

Ingredients:
- 1 can Amy's Organic Medium Chili
- 1 cup organic corn (fresh or thawed)
- 1/2 cup queso cotija or feta cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 cup organic shredded cheddar cheese
- 1/4 cup milk (for queso)
- 1 bag organic corn tortilla chips
- Pickled jalapeños & lime, to taste

Instructions:
1. Preheat oven to 375°F
2. Spread tortilla chips on a baking sheet
3. Warm Amy’s chili & spoon evenly over chips
4. Blend cheddar cheese with milk; drizzle over nachos
5. Sauté corn in butter until lightly charred, then season with chili powder, cumin, salt & lime juice
6. Sprinkle with corn, cotija & cilantro
7. Top with pickled jalapeños for a kick
8. Bake 8-10 mins until cheese melts & edges crisp
9. Squeeze lime if desired & enjoy
