Did you ever try pickling green strawberries? ๐Ÿ“

If not, you should definitely try making it!

Green strawberries have the essence of ripe red strawberries but they are more firm and tart which makes them great candidates for pickling!

Pickled green strawberries are a great addition to your summer cheese board, mignonette or can be served instead of the cornichons to accompany hearty rich dishes like country pate.

Using Acid Trip adds healthy probiotics to the dish and makes them to pickle faster. Raspberry Lime vinegar also adds fruitiness and beautiful aroma to pickled strawberries.

Simply cut green strawberries in halves, place them in a clean glass jar, add a few peppercorns and a bay leaf and submerge it with Raspberry Lime vinegar. Keep in the fridge overnight to develop the flavors.

Use it within 2 weeks for the best results.

I am convinced that small simple touches when we are cooking is what elevates the dish from just ok to exceptional. Marinating meat is one of those examples. This simple step can take a cheap cut of meat and make it tender, flavorful and juicy.

The basic ingredients of a marinade include an acid to break down the protein, oil to add richness and coat the meat before cooking; and salt and seasonings for flavor.

By diverting your attention from the usual vinegar, and marinating meat with fermented vinegar, you will create flavors you never imagined!

In addition to organic acids, kombucha vinegar has the added benefit of the probiotics being able to ferment the meat while it is in the marinade, tenderizing the meat with live cultures. This fermentation helps pre-digest the meat making it more tender and makes the nutrients more bioavailable.

And with added flavors such as Grapefruit or Raspberry Lime, it can permeate the meat with a surprisingly delicious twist.

Acid Trip Marinade

ยฝ cup BABA'S Acid Trip of your choice
ยฝ cup olive oil
3 garlic cloves, crushed
fresh thyme, sage, oregano
1 t red pepper flakes
1 t cumin
1 T Celtic salt
1 T pomegranate molasses or maple syrup

Mix all ingredients together.

You can use it to marinate both meats and vegetables.

To make pork shoulder kebab, cut the meat into 1-1.5 inch pieces, place it in a Ziploc bag, pour the marinade over and marinade in the fridge for 2-3 hours.

Place meat cubs on the skewers and grill over medium heat until cooked through.

It's Friday!
Let the stress of the week go and enjoy the weekend!
And here is a special cocktail for you!

Weekend Kick-off ๐Ÿ’ƒ๐Ÿ˜Ž

2 oz gin (we used Bluebird Distilling Juniperus gin)
1 oz St-Germain
1 oz Pear Ginger Baba's Acid Trip
3 oz Bee's Knees Baba's Brew Kombucha

Fill the cocktail shaker with ice. Add all ingredients except for kombucha. Shake for 20 seconds.
Strain it into your favorite glass filled with fresh ice. I love my nugget ice cubes made by ice maker!
Top with kombucha and have a glorious weekend!

And as an season-centric, amateur mixologist, I was excited to open a bottle of Creme de Violette and raise my glass to her Majesty Spring! ๐Ÿ’œ๐ŸŒท

Sound of Spring
2 oz gin
1 oz Creme de Violette liquor
1 oz Pear Ginger Acid Trip

Add all ingredients to a cocktail shaker filled with Gevi Home ice. Shake for 20 seconds and then strain into a glass filled with fresh ice.
Garnish with violet flowers or lemon twist.

Yesterday I came across a few interesting mushrooms while grocery shopping at Kimberton Whole Foods
So I bought a cluster of chestnut and some yellow oyster mushrooms. I roasted them at 415F with some salt and pepper. Drizzled our Cayenne Vinegar and served them with shaved watermelon radishes over haydari (strained yogurt, feta, fresh herbs, garlic, lemon juice and lemon zest). Served as a dip along side with toasted sourdough bread.

Happy National Cocktail Day! ๐Ÿน๐Ÿธ

There is something very depressing about opening your fridge and discovering yet another half lemon sitting on the shelf looking sad and wilted. ๐Ÿ‹๐Ÿฅด

So you feel guilty to throw it away because you spent several bucks on it after an amazing cocktail that you saw on Instagram. ๐Ÿน๐Ÿ’ฐ

Super thrilled to rock-and-roll today's event my new favorite cocktail Raspberry Tequila Sunrise ๐ŸŒ„
We still gave a few tickets left but if can't make it, I will share the recipe with you.

Here we go:

2 oz tequila
1 oz Chambord
1 oz Raspberry Lime Acid Trip
Sparkling water
Fresh raspberries for garnish

Fill the cocktail shaker with ice. Add tequila, Chambord and Acid Trip. Shake for 30 seconds. Strain into the glass filled with fresh ice. Top with sparkling water

One of the many tips I learned is the importance of using fresh ice (not the one that sits in your freezer and now smells like two year old lasagna and some other suspicious leftovers that you decided to keep just in case ๐Ÿ˜‚)
