🇺🇦HOMBOVTSI WITH PLUMS is an authentic Ukrainian dish made with FreshMade Farmers cheese
We suggest to cook hombovtsi with plum and amaranth flakes. A combination of the FreshMade tender cottage cheese and crunchy sweet amaranth praline are simply made for each other.
FreshMade Farmers cheese is rich in probiotics and calcium.
Amaranth is rich in protein, vitamins A and E, a source of calcium and magnesium.
Amaranth also contains a large amount of squalene - a substance that suppresses cell aging and helps in the absorption of Vitamin D. See Gluten-free version in the recipe section.
Ingredients
For the dough:
400-500 g (½ pack) FreshMade Farmers cheese
1 egg
50-80 g of wheat flour (you can replace it with amaranth flour and get a completely gluten-free dish)
100 g of brown sugar (4 tbsp.)
10 g vanilla
250 g of plum (can be replaced with peach, pear and other fruits)
For crumbs:
50 g of brown sugar
100 g of amaranth flakes (or replace amaranth flakes with finely chopped pecans)
½ tsp. salt
Instructions:
1. Combine amaranth flakes (100 g), brown sugar (50 g), and a pinch of salt in a skillet over medium heat. Stir constantly.
When the sugar begins to melt a little, stir well, and then remove the skillet from the heat.
Immediately spread the crunchy praline on the baking sheet and stir with your hands while it cools. It is important that the grains do not stick together. Your crunchy crumbs are ready.
2. Combine half a package (500 g) of FreshMade Farmers Cheese, an egg, salt (½ tsp), vanilla, and brown sugar (100 g) in a large bowl. Mix the mass. You should use a blender or a food processor to smooth the mass.
3. Add flour (50-80 g). Replace wheat flour with amaranth flour for a gluten-free dish.
Stir the dough, as for lazy dumplings or cheesecakes (syrniky). Try not to clog the dough with flour, so that the dough balls have a delicate structure. You should get a thick but soft dough. The more you stir the dough, the tougher it gets. You do not want these! You may need a little more flour. The main thing is that you can easily form balls from the mass.
4. Form small balls from the curd mass.
Cut plums (or other fruit) into wedges. Flatten the cheese ball and place a piece of plum inside.
5. Get water boiling and add a pinch of salt. Drop hombovtsi into the water. Do not try to boil all the hombovtsi at once, divide them into several batches.
When water reboils, cook hombovtsi for 2 minutes. Get them out of boiling water with the help of a slotted spoon.
6. Now roll hombovtsi in your crunchy crumbs.
Serve the hombovtsi while still warm with FreshMade sour cream.
