10/10 🥭 Mango Sago… I’ve been influenced and I’m never going back
RECIPE
Ingredients - 4 honey mangoes, 1 jar strained coconut jelly, 1 scant cup cooked Sago (tapioca pearls), 1 can coconut milk, 1 can sweetened condensed milk, mango puree (half a mango and 2-3 tbs condensed milk blended), pinch of salt, lime zest for garnish
Mix, chill, serve, obsess

😋20 min and one pan get you an easy toddler approved dinner that checks all the boxes
✅Protein
✅Fiber
✅veggies
✅yum
RECIPE 👇🏽👇🏽👇🏽
• 1 lb chicken (diced)
• 2 cups rice & super grains blend
• ½ cup lentils rinsed (I used the whole can)
• 1 cup corn
• 1-2 tbs tomato paste
• 1-2tsp chicken bouillon
• 4 cups broth and water
• 1 cup shredded cheese
• taco seasoning / cumin / garlic
• salt + pepper

Garnish
• cilantro
• avocado
• lime
• sour cream

How to Make It
1. Quickly Sauté chicken with seasoning.
2. Add rice, lentils, corn + broth.
3. Cover and cook ~15 to 20 minutes.
4. Fluff then Top with cheese and let melt.
5. Garnish and serve.

Save this for a busy night.

Whatever… this dressing is so good you’ll want to put it on everything

RECIPE
Thai Peanut Chicken Spring Roll Bowl

Ingredients

Salad Base
• 8 oz thin rice noodles (vermicelli noodles)
• 1 lb ground chicken (I made 2lbs and doubled the seasonings)
• 1 tsp avocado or neutral oil
• 2 cloves garlic, minced
• 1 tsp grated ginger/scallion whites
• 1 tbsp soy sauce/1tsp fish sauce
• 1/2 cup chicken broth

Veg & Crunch
• 1 cup shredded cabbage
• 1 cup shredded carrots
• 1 Persian cucumber, julienned
• 1 cup red pepper, julienned
• 3 green onions, sliced
• ½ cup cilantro
• ½ cup mint

Optional Crunchy toppings
• ¼ cup chopped roasted chili peanuts
• 2 tbsp crispy fried shallots

Creamy Chili Soy–Peanut Lime Dressing

Whisk together:
• 3 tbsp creamy peanut butter
• 2 tbsp soy sauce or tamari
• 2 tbsp fresh lime juice
• 1 tbsp rice vinegar
• 1 tbsp honey or brown sugar
• 1 tsp toasted sesame oil
• 1 tsp grated ginger
• 1 tsp chili crisp or sambal (leave out for kids)
• 2-4 tbsp warm water to thin consistency

Instructions

1. Cook noodles
Cook rice noodles according to package directions. Rinse under cold water and drain well.

2. Brown the chicken
Heat oil in a skillet.
Add garlic, scallions and ginger and cook 30 seconds.

Add ground chicken and cook until browned. Add optional veggies like cabbage and basil.
Drizzle 2-3 tbs peanut sauce, 1/4 c broth and
Season with soy sauce and a squeeze of lime. Stir to combine

3. Build the salad
In a large bowl add:
• noodles
• warm chicken
• cabbage
• carrots
• cucumber
• bell pepper
• herbs

4. Drizzle peanut sauce on top

5. Finish
Top with garnishes:
• peanuts
• sesame seeds
• Sriracha
• Crispy shallots
• extra herbs

SAVE AND ADD TO THIS WEEK’s RECIPES I’ve been making this recipe for 10 years and it’s a huge hit! So easy and such a crowd pleaser... it was the very first recipe I posted to YouTube 🤓
RECIPE
2Tbs Olive Oil
2lbs Boneless Skinless Chicken Breast and/or Thighs
-season chicken with salt/pepper paprika, onion powder and garlic powder to taste
1 small chopped onion
1C chopped mixed peppers
3-4 cloves minced Garlic
2 Tsp Achiote paste dissolved in 1 Tbs lime juice and 1 Tbs water
3 chipotle peppers in adobo sauce chopped (leave out for small kids if too spicy)
1/2 cup chopped cilantro
3 cups low sodium chicken broth or just enough to cover chicken
Juice of 1 lime
Salt and Pepper to taste
1-2 Tsp yellow mustard

On Medium-High heat warm Oil
Sauté peppers and onions
Add garlic
Add Achiote paste and chipotle peppers and stir to prevent burning
Push veggies to the side and add chicken
Flip chicken, stir to combine
Add broth to barely cover
Add lime juice
Add cilantro
Season with salt and pepper
Cover and simmer on medium-low for 30-45 min
Remove chicken from pot once tender
Shred with forks
Turn heat up to medium-high, add mustard and reduce by half
Add 3-4 ladles sauce to shredded chicken
Serve with fresh tortillas, salsa and toppings
Great with beans and chips!

Have you tried the viral steamed dumpling lasagna? If you haven’t here’s your chance. 10/10 worth the hype and SO easy to make

RECIPE
Wonton wrappers, set aside
1lb ground pork
1tbs grated ginger
1tbs grated garlic
2-3 scallions thinly sliced
1tsp white pepper (black pepper is fine too)
Onion and garlic powder to taste
3-4tbs low sodium soy sauce
2-3 tbs chicken broth (plus extra on the side)
(Optional: Add in a tsp or two of chili crisp and sesame oil)

Gently mix all ingredients into the meat and let meat rest for 15 min

Assemble ramekins or small casserole dish:
Splash broth or water on bottom of dish
Add a layer of wonton
Add thin layer of meat mixture
Add a layer of wonton wrappers
Splash broth or water on top (just enough to wet the wrappers)
Repeat again and top with final layer of wonton wrappers and another splash of broth
For ramekins: steam for 15 min
For casserole: steam 20-25 min until meat is cooked through and wontons are shiny and translucent
Carefully remove from steamer
Garnish with soy or black vinegar, more scallions and chili crisp!

I could’ve added kewpie and sriracha to the tuna and it would’ve take it over the edge but I almost passed out from starvation… there simply wasn’t time 😭🍙
