Back again to cook a Father’s Day meal for this Gluten-Free family!

On the menu:
1. Gluten-free Aloo and Paneer Paratha
2. Rajma Masala, in classic tomato sauce
3 Oven Roasted Eggplant Bharta
4. Butter Paneer, with a creamy cashew sauce
5. Served with a side of cumin-scented Basmati rice

Back again at my Tuesday client’s! We had a fun day of cooking today. On the menu:

1. Jalapeño Corn Chowder: creamy fire-roasted corn chowder with charred peppers and jalapeños. Topped with a bit of feta
2. Lettuce Wraps: with oven-crisped spiced tofu, shiitake mushrooms, carrots, and cashews for a bit of crunch. Served with a side of home-made hoisin sauce
3. Kadai Paneer: with onions and bell peppers, and a bit of healthy fats from cashews. A staple North Indian dish
4. Baked Ziti: a family favourite, with made from scratch rosé sauce and lots of roasted veggies. This week, we had mushrooms, broccoli, zucchini, and corn folded in

This week’s menu for my Tuesday client! It’s always so much fun to cook for this family ❤️

We focused on making healthier versions of some rich Indian dishes this week - food that would be satisfying and energising, without triggering a need to nap :)

On the menu this week:
1. Paneer Bhurji - made from super fresh home-made paneer and red bell peppers
2. Malai Kofta - with no butter or cream, and air fried kofta balls. The creaminess came from a blend of almonds and cashews
3. Gujarati Style Black Eyed Peas - super healthy with no oil, and full fibre and plant based protein
4. Eggplant with Baby Potatoes - my favourite thing to make this week! I got to talk with my mom and steal her recipe for this classic Gujarati favourite. Spiced perfectly with some healthy fats from roasted peanuts and sesame seeds

Memorial Day weekend meal prep for a family that’s fully gluten-free. A gorgeous, sunny day! On the menu:

1. Butter Paneer - with a creamy cashew sauce
2. Rajma Masala - a healthy, classic recipe that’s loved by adults and kids alike!
3. Eggplant Bharta - oven roasted and super healthy with a little extra protein from green chickpeas
4. Stuffed Aloo Parathas - made gluten free!

Cooked again for this fun family today! On the menu:

1. Baked Ziti - a family favorite! With a creamy rosé sauce, grilled veggies, and extra cheese this time around :) (top left)
2. Rajma Masala - classic kidney beans with tomatoes and Indian spices (top right)
3. Curried Noodle Soup - spiced coconut milk soup with carrots and broccoli, topped with noodles (middle)
4. Black Bean Burgers - wholesome black bean burgers with quinoa, walnuts, beets, and mushrooms (bottom)

A fun afternoon of meal prep! On the menu:

1. Jalapeño Corn Chowder with fire roasted corn, red bell pepper, and charred jalapeños
2. Baked Ziti with made-from-scratch rose sauce, grilled broccoli, zucchini, and corn
3. Butter Paneer with homemade creamy cashew sauce
4. Smoked Eggplant with fresh green chickpeas and peas

Everything made from scratch with simple ingredients! So excited to cook for this family again on Tuesday next week!
