We've been getting ready for a big life changing event coming up early next week for me, and that has meant stocking up on all the nutrient rich food. Took out several pounds of chicken feet and chicken backs to make a restock of our bone broth. I like to set this up to simmer away on the stove for at least 24hrs to get all of the collagen and nutrients off of the chicken.
You can slurp this broth anytime. I added salt, peppercorns, celery, onion and garlic. It really gives it the most incredible flavor. And since I have yet to pressure can things, these jars go right into the freezer.
It's been a very stressful summer with the horror that was our kitchen remodel, and unfortunately, even though we did find someone to redo the crooked backsplash, we've once again encountered issues with the new cabinet painters. It's very very hard to find good cabinet painters in north central FL.
Regardless of that we are doing our best to prepare for the events to come, I've been baking lots and lots of breads, pretzels, bagels, ect, you name it I've baked it in the last 2 weeks. I'm stocking the freezer with everything.
It's easy to find things to complain about with all of the messes, but it's also even easier to list all the things I'm grateful for, and that list is very long. So I'm trying to be positive because I know there will be a great outcome waiting for me on the other side of this, which gives me yet another thing to be grateful for.
I'm living in gratutide for all of the support we've received so far.
And doesn't a nice hot soup cure almost anything?
