Today, I would like to share one of our traditional dishes from Manus Province called Polom.
Polom is a special sago dish that is usually prepared during big events and important celebrations in our Manus culture. First, we fry the sago. Then we scrape the coconut and squeeze the coconut milk into a pot. We boil the coconut milk until it becomes foamy and starts turning into oil.
After that, we add the fried sago into the pot and continue stirring it slowly until the sago becomes dark, sticky, and well cooked. While it is still hot, we place it onto a tray and shape it like a cake.
To serve the dish, we add fried fish together with rich coconut cream, spring onion, lemon juice, and fresh lemon slices for extra flavor.
Polom is more than just food to us. It is part of our tradition, culture, and our way of bringing people together during special occasions.
