Maiden Voyage of Big Betty!

Since the kitchen was cool and it’s a slow holiday weekend we FINALLY fired up the pizza oven to test her out. Catrina and I were super excited after we made homemade dough and made a simple cheese pizza.

Because over here… summer is already booking FAST and I’m simultaneously excited and already a little tired thinking about it 😂

Memorial Day cookouts are coming and look… I love a burger and a hot dog as much as the next person. But this Nashville Hot Chicken Sandwich? She’s got a little more personality 😏🔥

Crunchy fried chicken, spicy glaze, tangy slaw, pickles, soft roll, messy in the best way possible. Every bite tastes like summer and bad decisions you’d absolutely make again.

Honestly, once you start stacking heat, crunch, acid, and texture like this… plain ketchup on a hot dog starts feeling emotionally flat 😂

June classes are live ☀️🔪🍝

If you’ve ever wanted to learn how to make pasta from scratch without crying into flour, or finally figure out knife skills without aggressively attacking an onion, this is your sign 😂

This month we’re doing:
🍝 Ravioli from Scratch
🔪 Knife Skills: Stir Fry Edition
🍝 Fettuccini from Scratch
🔪 Knife Skills: Ratatouille Edition

All classes run from 6:30–8:30pm, are BYOB, and aprons are provided because I care about your clothes and your dignity 🥂😂

These classes are super hands-on, very relaxed, and built for regular people who want to cook better, eat good food, and have a fun night out without feeling intimidated.

Also yes, you get to eat everything. Obviously.

The kitchen is hot and so are my custom three course cooking classes 🥵

Last night was a fun and challenging menu to create for this fun couple. She wanted a vegan dessert that involved a blow torch🔥…but it had to be dairy free.

I found the perfect vegan creme brulee recipe that will now be on a 💯 vegan menu I have in the works.

Student → Assistant → Friend. Honestly one of my favorite origin stories.

Got to cook for Maureen’s half marathon celebration this weekend and I mean… if you’re going to run 13.1 miles, you deserve a full Comfy Pants menu. No notes. That’s just science.

So proud of her. The food was good but the room was better. 🥹

Last weekend’s Mother’s Day Bougie Brunch was honestly one of my favorite events I’ve done 💐🥂

We ate a LOT of brunch, built bouquets with Destiny from , hung out for a few hours without anybody feeling rushed, and somehow made the whole room smell like flowers, browned butter, and mimosas at the same time.

Huge thank you to everyone who came out and trusted us with your Mother’s Day plans. Thank you to Destiny for bringing all the flower magic 🌸 and to our friend for the live music that made the whole thing feel cozy and fun.

Also…I can confirm the crêpes and cranberry mimosa cake absolutely held up as crowd favorites.

Now if anybody needs me, I’ll be quietly recovering with leftover brunch potatoes and an iced coffee the size of my head.

You’ve probably noticed a new face at my classes and events. I want to formally introduce you to my new sous chef Catrina!
I met her when I first moved here and we taught at the same cooking school.

We both went our separate ways during Covid and reconnected a few months ago when I asked her to help with an event. I could not be happier to have her by my side and in my team😊

Fun Facts:
She raises chickens
Her dog is named Ziti
Her favorite place is the beach 🏖️
Favorite cooking tool is a microplane

Still thinking about this menu from Sunday’s private event 😭✨

A mom reached out all the way from California to hire me to cook for her son’s CMU graduation weekend and honestly…this one felt really special.

We did:🥔 crispy roasted potatoes with bacon🥕 roasted carrots + cauliflower🍖 Moroccan lamb chops with citrus, herbs, and pomegranate🥓 bacon wrapped dates🥂 prosciutto + asparagus crostini🥗 fresh salads, sauces, snacks, the whole spread

And not to be dramatic but…I was VERY proud of how this food turned out. Like the kind of proud where you stand in the kitchen staring at the plates for a second before people eat them 😂

Cooking for people during big life moments will never get old for me. Congratulations to the graduate and thank you for trusting me with such an important weekend 💛
