My favorite part…

I absolutely love the look of pasta dough after it’s sliced in half. When I first began my studies, American Sfoglino by was my bible. Aside from the incredible content, the pictures were stunning. I was so proud when I sliced through a ball of dough and it exactly resembled pictures in his book. It feels like finding a golden ticket every time. Sometimes it makes me feel like I’m a geologist studying a cross section of a rock.

ps. My daughter is studying patterns in nature in science class. Lines in a rock are called strata
