Asian Peanut Chicken Noodle Bowl
Ingredients:
8 ounces linguine pasta, broken into thirds
1 (14 oz) pkg frozen tri-color pepper & onion medley, thawed
½ cup Honey Teriyaki Sauce
¼ cup creamy peanut butter
1 tablespoon Fiesta Party Seasoning™
2 cups chopped rotisserie chicken
Chopped fresh cilantro, chopped peanuts, optional
Directions:
1. In large saucepan, prepare pasta according to package directions.
2. Add veggies to pasta the last 1 minute of cooking. Drain.
3. Add pasta and veggies back to pan.
4. Meanwhile, in small bowl, whisk together Honey Teriyaki Sauce, peanut butter and Fiesta Party Seasoning.
5. Stir into pasta with chicken.
6. Cook until heated through, stirring frequently. For a thinner consistency, stir in ¼ cup water.
7. Serve garnished with cilantro and peanuts.
Makes 6 servings.
Serve with a green salad.
Make Ahead & Freeze:
- Prepare pasta according to package directions; rinse with cold water.
- Toss with 1 tbsp vegetable oil. Place in a gallon freezer bag with vegetables and chicken.
- Prepare step 2 sauce and place in a quart freezer bag.
- Place both bags in a gallon freezer bag. Seal well, label and freeze. - Thaw completely. In large skillet, heat ⅓ cup water over medium heat.
- Add pasta, veggies and chicken; stir in sauce.
- Cook until heated through, stirring frequently.
