A te paprikáid, én ezeket választottam:

* 7 db édes kaliforniai paprika
* 1 db jalapeño
* 1 db hosszú, csípős paprika
* 1 db poblano paprika

A többi hozzávaló:

* 2 csésze (kb. 300 ml) 5%-os almaecet
* 4 evőkanál pektin
* 2 csésze (kb. 400 g) kristálycukor
* 1 csésze (kb. 340 g) méz
* 1/2 evőkanál füstölt paprika (elhagyható)
* 1/2 teáskanál só (elhagyható, illetve ízlés szerint)
* 2 gerezd áttört foghagyma
* 3 tiszta befőttes üveg
* Nátrium Benzoát

Elkészítés

1. A paprikák előkészítése

4. Üvegekbe töltés

Töltsd a forró dzsemet tiszta üvegekbe. Takard le száraz dunsztba 24 órára.

Mivel fogyaszd?

* Krémsajtra kanalazva, sós keksszel
* Érett cheddar sajthoz
* Grillezett csirke vagy sertéshús mellé
* Hamburgerbe vagy grillezett sajtos szendvicsbe

🌶️ Smoky, Sweet and Tangy Pepper Jam

There are several variations, but the basic ingredients are sweet and hot peppers, pectin, sugar, and apple c***r vinegar. Here’s the version I made!

Ingredients

The peppers

These are the peppers I chose:

* 7 sweet bell peppers
* 1 jalapeño
* 1 long hot pepper
* 1 poblano pepper

The remaining ingredients

* 2 cups (approximately 300 ml) of 5% acidity apple c***r vinegar
* 4 tablespoons of pectin
* 2 cups (approximately 400 g) of granulated sugar
* 1 cup (approximately 340 g) of honey
* 1/2 tablespoon of smoked paprika (optional)
* 1/2 teaspoon of salt (optional, or to taste)
* 2 cloves of garlic, crushed
* 3 clean canning jars
* Sodium benzoate

Instructions

1. Prepare the peppers

Wash the peppers and remove the stems and seeds. If you prefer a milder jam, remove the inner ribs from the jalapeño and the long hot pepper as well.

Finely chop all the peppers.

2. Cook the peppers

Place the peppers in a large saucepan and add the apple c***r vinegar.

Gradually stir in the pectin, then bring the mixture to a boil, stirring constantly.

3. Add the sugar and honey

Add the sugar and honey. Mix thoroughly, then boil vigorously for 5–8 minutes, stirring continuously.

Remove from the heat and skim off any foam that has formed.

4. Fill the jars

Pour the hot jam into clean jars. Cover and wrap the jars in towels to keep them warm, and let them cool slowly in this insulated wrap for 24 hours, or water can for 10-20 minutes.

What to Serve It With

* Spoon it over cream cheese and serve with salty crackers.
* Pair it with aged cheddar cheese.
* Serve it alongside grilled chicken or pork.
* Add it to a hamburger or a grilled cheese sandwich.

🇭🇺 The Hungarian Secret to Getting Kids to Eat: Little Soldiers!

When I was growing up in Hungary in the late ’70s and early ’80s, my dad had a little trick for getting me to eat. He made me katonák—Hungarian for “little soldiers.”

They weren’t real soldiers, of course. Just little squares of bread topped with a piece of sausage, cheese, bacon, or whatever else we had in the kitchen. On the side? Fresh tomatoes and sweet peppers.

Dad would arrange them on a plate, and I’d happily eat one after another. No negotiations, no “just three more bites,” no airplanes flying into my mouth. Somehow, making food small and fun made all the difference!

I don’t know exactly when Hungarians started calling these little bites katonák, but the tradition has been around for generations. Simple food, a playful name, and a little love—that’s all it took.

Want to try this with your kids?

🥪 Cut bread into small squares.
🧀 Offer a variety of toppings: cheese, sausage, cooked bacon, or whatever your family enjoys.
🍅 Add colorful veggies on the side. Bite size is good.
👩‍🍳 Let the kids build their own little soldiers!

Keep it fun, eat together, and let children decide how much they’re hungry for. The goal isn’t to get them to clean their plates—it’s to help them enjoy food without turning mealtime into a battle. For little ones, always choose age-appropriate sizes and textures to reduce choking risks.

Looking back, I don’t think my dad was following a parenting strategy. He was just making me something I loved. But decades later, I still remember those little sandwiches.

Sometimes, the best family traditions aren’t fancy recipes. They’re little acts of love that stay with us long after childhood.

So, have you ever made “little soldiers” for your kids? And if you grew up with them, what toppings did your family use?

Let’s share our childhood food memories and keep the sweetest traditions alive, one little bite at a time. ❤️

🇭🇺 Tejfölös Gombapaprikás with Nokedli 🍄

If there’s one Hungarian dish that will always have my heart, it’s tejfölös gombapaprikás! Creamy, rich, full of paprika flavor, and served with soft, homemade nokedli… honestly, it doesn’t get much better than this. ❤️

This is pure Hungarian comfort food, simple ingredients, incredible flavors, and the kind of meal that makes you want to go back for seconds (and thirds!).

✨ The video tutorial is coming next, but here’s the recipe so you can get ready to cook!

🍄 Ingredients

For the mushroom paprikash:

* 500 g (1 lb) mushrooms, sliced
* 1 medium onion, finely chopped
* 2 tbsp lard or butter
* 1–2 tbsp Hungarian sweet paprika
* 200 g (¾ cup) sour cream (tejföl)
* 1 tbsp flour
* 1 small tomato chopped
* 1 small cubanelle chopped
* 150–200 ml (⅔–¾ cup) water or vegetable broth
* Salt and freshly ground black pepper, to taste
* Fresh parsley, basil or thyme optional - I used tyme and basil. But you can also use just parsley or leave it out altogether.

For the nokedli (Hungarian dumplings):

* 300 g (2½ cups) all-purpose flour
* 2 eggs
* 150–180 ml (⅔–¾ cup) water
* ½ tsp salt

👩‍🍳 How to Make It

1. Make the mushroom paprikash.
Heat the oil in a large pan and sauté the chopped onion until soft and translucent.

2. Remove the pan from the heat briefly, stir in the Hungarian sweet paprika, mix until the paprika melts into the fat.

3. Add the tomato and cubanelle, and let them simmer until they break down.

4. Add the sliced mushrooms. Return to the heat, season with salt and pepper, thyme and cook until the mushrooms release their juices.

5. Let the flavors develop.
Add the water or vegetable broth, cover, and simmer for about 10–15 minutes, until the mushrooms are tender.

6. Make it creamy.
In a small bowl, mix the sour cream with the flour until smooth. Stir in a few spoonfuls of the hot mushroom liquid to temper the mixture, then slowly stir it into the pan.

Simmer gently for another 2–3 minutes until the sauce thickens. Avoid boiling vigorously after adding the sour cream. Add the finely chopped basil or parsley at the end.

7. Prepare the nokedli.
Mix the flour, eggs, salt, and water into a thick, sticky batter. Bring a large pot of salted water to a boil.

Using a nokedli maker or a spaetzle press, drop small pieces of batter into the boiling water. Cook until the dumplings float to the surface, then give them another minute before removing them with a slotted spoon.

8. Serve and enjoy!
Spoon the creamy mushroom paprikash over a generous helping of freshly cooked nokedli. Finish with a little fresh parsley if you like, and enjoy every bite!

❤️ My favorite way to eat it? A big plate of nokedli covered in that creamy paprika sauce. Nothing fancy, just a little taste of Hungary and a whole lot of comfort.

I make this vitamin rich pickled vegetable mix every fall for the winter. It is called ‘Csalamádé’ In Hungary, csalamádé is served alongside just about every main meal containing meat. the bright, tangy vegetables provide a refreshing contrast to the richness of the meal. The acidity helps cut through the richness of meat dishes and makes them feel lighter and more refreshing.

🥕 Never buy vegetable bouillon again! No fillers and additives in this recipe! 🥕✨

1 kg vegetables total:

* 450 g carrots
* 200 g celery root
* 150 g parsley root
* 100 g kohlrabi
* 70 g onion
* 30 g bell pepper

Plus:

* 1 large bunch of fresh parsley (about 50 g)
* 1 large bunch of lovage (optional but adds good flavor)
* 2–3 cloves garlic
* 120–150 g salt (optional)
* about 150–200 ml water

🍲 Preparation

1. Clean and chop the vegetables.
2. Put the vegetables in a pot and add 150–200 ml of water.
3. Cover and cook over low to medium heat for 20–30 minutes, until all the vegetables are completely soft. There is no need to cook them for hours.
4. Add the parsley and garlic during the last 5 minutes of cooking.
5. Blend everything until very smooth using an immersion blender. If it is too thick, add a small amount of the cooking water.
6. Optional: Stir in 120–150 g of salt. For the first batch, I would start with 130 g.
7. Allow the mixture to cool completely.

❄️ Freezing

Ice cube tray:
Pour the mixture into an ice cube tray and freeze. Once frozen, transfer the cubes to a well-sealed freezer bag.

Mason jar:
You can use a jar, but only use a wide-mouth, freezer-safe jar. Do not fill it completely—leave at least 2–3 cm (about 1 inch) of space at the top, because the mixture expands when frozen. Put the completely cooled mixture into the jar and then freeze it.

Storage: For the best quality, use within approximately 6–8 months.

Dry version is the same, except once the vegetables are chopped use a dehydrator and then grind coarsely
