We rolled up our sleeves and traded a patch of weeds for the ultimate campsite focal point! 🪵🔥

There’s a common misconception that hitting the road in an RV means lowering your standards at the dinner table. People assume you’re limited to hot dogs on a stick or whatever fits into a single microwave bowl.

But if you ask us, a compact kitchen and a campground grill aren’t limitations. They’re an invitation to get creative. 🔥🥩

We wanted something dark, smoky, and deeply savory to match the rhythm of the woods—but with a bright hit of flavor to wake up the palate. The result? The "Midnight Ember" Coffee-Chili Rubbed Steak.

By mixing dark roast coffee grounds with smoky paprika and earthy chili powder, you get a rub that "blooms" over the hot campground coals, creating a deep, caramelized crust that seals in every drop of juice. To cut through that rich intensity, we topped it with a fresh, acidic Serrano Chimichurri whipped up right on our small camper counter.

It’s proof that you don't need a sprawling gourmet kitchen to make an unforgettable meal. You just need a little fire, a little flavor, and the right company.

Is there anything better than sitting around a campfire?

The flames building, sparks flying to the heavens, and thousands of stars opening up on a warm late spring evening. It strips away the urge to check a phone or think about tomorrow. You're just entirely present, listening to the low, steady chorus of frogs off in the distance.

But for us, this particular fire meant a little bit more.

Before we could sit back and watch those sparks fly, we had to build our own peaceful sanctuary. We shaped this space with our own two hands—hauling river rock, leveling the ground, and setting the frame. It’s funny how a patch of earth changes meaning once you’ve spent an afternoon working it. It stops being just a campsite and starts being a home.

Our new fire pit design passed the test with flying colors—intense, direct heat, and barely a whisper of smoke. Sitting here looking back at the camper glowing in the twilight, it reminds you exactly why we hit the road.

Waking up with the birds. There's a certain magic to walking the trails and just listening to the different birds you run across. I couldn't have asked for a more fabulous encounter than with this red-winged blackbird. He was close enough to almost pet. It really was the perfect moment on a beautiful morning walk on the Bass Lake Trail.

Last weekend was all about getting rid of the ankle breakers on the campsite. Mike moved 85- 5 gallon buckets of dirt to get most of our site level. According to Gemini he moved around 4,200 Lbs., or the weight of our camper over the weekend. He might have another 10-20 buckets to bring over this weekend.

We are also adding the fabulous firepit this weekend, so look for us to post on the progress of that.

Who said camping and a seasonal was all about sitting around and drinking all day?
