Make your first stop at Koffee’s Coffee because there’s something about freshly ground beans that makes your cuppa even better. Glen has many different roasts from which to choose so if you like a light roast, he has it. If you like yours dark and rich, he has a dark roast. If you want in between, you’re in luck. Right next to Glen is Ree-Lee Hot Sauce which would be lovely in your eggs, broth, or over your sautéed veggies.
I won’t get into the fabulous veggies that are overloading our produce tables. If you’ve been following, you know that our vendors have beautiful veg that are well worth your time. But let’s talk about the meats. Mr. Two is well known at the market for having shrimp of all sizes. All you need to do is take the home, peel them, and add to whatever recipe you’re using. Then, hopefully you didn’t throw away the peels and tails, cover them with water and make a delicious seafood broth. This is kinda depression era thinking where you didn’t just throw out things that can still be used. With food prices as they are now, I think we need to bring that thinking back.
Stirling Smith Farms has become the place to go for great boudin. They actually have three different kinds of boudin: Wagyu beef, Turducken, and Pickled Pork. I always thought their Golumpki was boudin but it is more of a sausage made with chicken, pork, Italian sausage, cabbage, and Parmesan cheese and it tastes as good as it sounds. They have also started to make sausage with their Wagyu beef and have a pork sausage to boot. They offer tallow made with the suet from the beef cows and it is wonderful for frying. Their Wagyu beef burgers come in quarter and half pound sizes and are pre-pressed and ready for the grill/pan. You’ll also find Wagyu steaks and boudin balls which are perfect for snacking! I can’t believe the things they offer and it’s a good idea to stop by and chat with Kelly and get details on all their products.
Where can you find the best chicken? At Credo Farms, naturally. Yes, Hope and her family have been pasture raising chickens since before they set up at the Covington Farmers Market. You can get whole chickens (small, medium, large) as well as pieces/parts. In that depression era mindset I mentioned earlier, the whole chicken is your best choice. This gives several meals from just the one bird. Start with roasting the chicken. Add water to the bottom of the pot while roasting for a delicious broth that can be used for making gravy or soups. Next cut up the chicken for one meal and, depending on how large your family is, you can get another meal out of the meat. Any leftover meat makes an excellent chicken salad. You can do the same with pieces/parts, just save the bones in the freezer until you have enough to make a pot of broth. The broth itself freezes very well. And, if I’m not mistaken, Hope has bone broth for sale!
You’ll be lining up at Jubilee Farms for all cuts of beef, pork, and lamb. Liz and Evie have everything from pork chops to ribs to ground meat to roasts and probably more that I can’t think of. You can add ground beed, steaks, roasts, ribs (especially short ribs which are exceptional when slow cooked in the crockpot). If you’re a lamb aficionado, ground lamb, lamb chops, leg of lamb (always a great choice), and shoulder will be the highlight of your shopping (and eating). Evie is also well known for her excellent chicken salad with grapes and celery and, every now and then, she will have red beans and rice which is especially nice when it’s so delicious and you didn’t have to cook.
