High Protein Bean Edamame Salad
This Bean salad is perfect for summer picnic or get together. Pair it with nacho chips for extra crunch. Leftovers can be taken for packed lunch.
1 can of black eyed peas
1can canned of black beans
1cup of edamame cooked for 2 minute in microwave
3 tomatoes diced
1 raw mango diced
1 red bell pepper diced
1 sweet onion diced
1 avacado diced
1cup of corn cooked in microwave for 1 minute
Jalapeno diced to taste
Cilantro chopped
Lemon juice from 2 lemon/lime
Mix all the ingredients and scoop with nacho chip and enjoy.
