A birthday bake for a dear friend/food mentor Peggy. ♥️
Inspired by ‘s brilliant bake off holiday showstopper, these flavors were absolutely mind blowing. Layers of limoncello scented sponge, rhubarb and raspberry thyme compote, lemon and rhubarb cake soak, raspberry Swiss meringue buttercream (my first ever!), all wrapped in a vanilla bean rhubarb collar. All of this, with fresh and masticated raspberries, thyme, candied lemon peel, and extra compote on top could only be described as “sparkly ✨” together. So much tartness, but all brought to life by the perfect balance of sweetness. A labor of love.
Thanks to for the special use of the kitchen, it made this projects efficiency possible! And thanks mom for remembering to take a picture! Time to make a simple batch of chocolate chip cookies next 😅.
