One of Brandon's favorite dinner dishes is these small caramelized lamb chops atop a garlicky, cheesy potato casserole. He likes the broccoli florets, but only the tops—no stems, please! He patiently waited as I garnished his plate with fresh orange wedges and a colorful array of microgreens (mizuna mustard, arugula, and amaranth). 🫶🌱

Try enhancing your Thanksgiving leftovers with some fresh microgreens! This combo would be perfect on leftover soups, but I especially imagine it working wonderfully on a thick, creamy butternut squash, lentil, or tomato soup. Top it off with seasoned croutons, pumpkin seeds, dried cranberries, and a spoonful of Brussels sprouts, carrots, corn, mushrooms, or cubed squash and sweet potatoes from any leftover casseroles. Add raw thin-cut scallions or Elephant garlic, shaved parmesan, olive oil and/or balsamic vinegar to drizzle, and a sprinkle of cracked black pepper.

Now, toss in some Lacinato kale, sunflower, purple kohlrabi, and/or Sango radish microgreens for an extra burst of flavor. Oooh, ahhh! And if you're an omnivore, throw in some leftover turkey, ham, or bacon bits... 😋 Somebody stop me now!🫶🌱
