Lamb.
No big saw. No tractor. No stock trailer. No grinder.
Lambs are incredibly simple to harvest and process. They provide tender, flavorful, gourmet, red meat! Perfect for grilling and roasting.
And yes, Adam is doing a great job today!😊

Rendered some lamb tallow after Alan processed a pair of lambs today. I found a simple recipe and whipped (literally) up this Tallow Balm. It’s always fascinating how it goes from a firm smooth fat to a fluffy, airy, whipped texture—and stays there!
I love lambs!!

Manchego Curado.
—a mature Manchego sheep cheese.
Rich, nutty, dry, clean, chock full of flavor. Not spicy or sheepy.
Last summer 12 gallons of fresh raw sheep milk was transformed into a large wheel of Manchego cheese that slowly aged in our cave, until now.
It’s slow food. It’s nutrient dense. It’s artisan. It’s traditional.
Cheesemaking can be an incredibly rewarding process.
One of the things I always love about cheese is how when you set a good wheel on the shelf, it gets better!

This is likely our last cheesemaking class until fall!! Get with me if you’d like to be added to our fall class list, also provide dates that work well for you.

This is how I end up pricing butter at $30/lb🤷‍♀️

15 gallons of fresh milk…
6 quarts of cream so thick it doesn’t pour…
6.5 pounds of raw salted butter…

On the low end…
$150 in milk
$50 in labor

Only $31 a pound for today’s freezer stock up.
