This was legit so easy and yet an elevated summer dinner. A few glugs of evoo in a deep skillet with mimced shallot and garlic. Cook a few and then add 2 cans whole peeled san Marzano tomatoes, salt to taste, and simmer on low-med low for 10-15 min. Once done, tear up about 6 basil leaves and stir in. Separately, boil a Lb of pasta of choice. Once pasta is ready, drain and add to sauce. Plate, top with 1/2 a ball of truffle burrata, and add an optional drizzle of truffle oil. If I was making for someone other than my kids, I’d have cleaned up the bowl and added a sprig of basil on top. Chef’s kiss!

This was a seriously fast dinner—and better than I was expecting! Mozz ravioli (the fancy ones in the refrigerated section), Rao’s tomato basil sauce, Caesar salad bag kit, frozen garlic bread. The only thing I did to “church it up” was whip together ricotta, garlic, basil, salt, lemon zest and juice for a little zhuzz.
