Teriyaki salmon strips with avocado feta salsa
INGREDIENTS
2 cups cherry tomatoes (chopped)
1 1/2 avocado
1/2 of a red onion
1/4 cup chopped cilantro
Lime juice
3 tbsp feta
1 tsp sea salt
DIRECTIONS
My salmon was preciously prepped- coated in olive oil then baked at 375 for 15 min & broil for another 3 min. To reheat for this meal, I cut the whole piece into smaller strips then sautéed on high heat with teriyaki sauce (for about 2 min or until hot & evenly coated). Combine all salsa ingredients and then squeeze lime juice over everything. Sprinkle with sea salt and serve with the salmon once done.

Ingredients 👇🏼
- 600g Diced Chicken Breast (raw weight)
- Italian Seasoning, Pepper, Salt & Garlic Powder
- 400g Low Fat Cottage Cheese (Brand: Woolworths Creamed Cottage Cheese)
- 100ml 95% Fat Free Evaporated Milk (Brand: Carnation - or you can use fat free / skim milk)
- 25g Freshly Grated Parmesan Cheese
- 1 Diced Onion
- 5g Plain Flour Mixed With Water
- 6 Lasagna Sheets (Brand: Vetta Smart Instant Lasagna Sheets - if you aren’t using instant lasagna sheets please boil them beforehand)
- 180g Low Fat Cheese (Brand: Bega 50% Less Fat Grated Cheese)
- Fresh Parsley (optional topping)

Steps 👇🏼

1. Add seasonings above to 600g of diced chicken breast & mix it together.
2. In a blender cup add low fat cottage cheese, the same seasonings, low fat milk or 95% fat free evaporated milk & freshly grated Parmesan cheese then blend until smooth.
3. Cook chicken on high heat for 4 min on each side then set aside.
4. Add diced onion & once it has colour lower the stove to low heat & add the sauce.
5. Add 5g of plain flour mixed with water & keep stirring on low - medium heat until it thickens.
6. Spread thin layer of sauce on a baking dish followed by 3 instant lasagna sheets, another layer of sauce, 1/2 chicken, 90g low fat cheese & repeat exact same steps once more. (if using regular lasagna sheets boil them beforehand)
7. Cover & bake At 180 degrees Celsius for 25 min then take the cover off & bake once more for 5 - 10 min or until the cheese is golden brown.

5-INGREDIENT, 5-MINUTE Citrus Dijon Vinaigrette, a sweet and tangy salad dressing, that pairs well with a bunch of different salads, pasta salads, and to baste cooked chicken and pork. It is low-carb, GF, GF, and vegetarian. So delish and refreshing! You can prep ahead and refrigerate for up to one week in the fridge. So delish and refreshing!

Yield: 1 1/4 cups

Ingredients

2 tablespoons orange juice plus zest of ½ orange replace it with lemon juice and zest for making a lemon Dijon vinaigrette if you're on a strict keto diet
1 tablespoon fresh lemon juice or apple cider vinegar or white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon real maple syrup or honey, or more to taste (NOTE: If you're on a keto/low-carb diet, use sugar-free maple syrup or honey).
A pinch of table salt
A dash of freshly ground black pepper
½ cup extra-virgin olive oil

Instructions

Zest ½ orange using a zester. Place it into a mason jar and add the orange juice, lemon juice, mustard, maple syrup, salt, and pepper.

Lastly, add the olive oil, close the jar tightly, and shake well until creamy and emulsified. TIP: Dress your salads with just enough of the maple dijon vinaigrette to coat the salad; otherwise, it will become soggy!
