Toast & Tide

When I first moved to Richmond Hill I was blown away by this beautiful magazine just showing up in my mailbox! Always anxiously awaiting the arrival of the next one. In a world of endless scrolling, there’s something so special about a tangible magazine you can slow down with - real pages, thoughtful stories of our community’s past and present, and so much love for local creativity. Grateful that I get to be part of it. Cheers to 20 years ❤️

Chilled Seafood Tower

Appetizer trio of:
Baked Oysters w/herbed butter and crispy prosciutto
Crab Maison
Yukon Gold Petites topped w/ crème fraiche and caviar

Main:
Pan Seared garlic butter lamb chops
Served w/ duchess potatoes & charred baby broccolini

Dessert:
Spiced cake with cream cheese frosting. Topped with fresh figs and raspberries

Chicken Enchilada Bowl

So many of my favorite flavors all together in a bowl! You can make one or make multiples to save for a quick meal throughout the week! Each bowl has shredded chicken, tortillas, shredded cheese and black beans. Garnish can vary based of what you have on hand, load it up with veggies like romaine, radish, green onions, etc.

Ingredients per bowl: 14F - 30CHO - 41P (approximate calculations - brands may vary)

4 oz shredded chicken in taco seasoning
1/4 cup shredded Monterey Jack (divided into 4tblsp)
1/4 cup black beans
1/4 cup enchilada sauce (I used )
2 small tortillas (I used )
1/4 cup plain 0% greek yogurt mixed with smoked paprika and lime juice.

Starting with an oven safe container, layer the ingredients to build your bowl. Once you’re ready to eat bake in a 400° oven for approximately 15- 20 minutes. Top with your veggies and serve with the Greek yogurt!

Lamb Smash Tacos (see the full video on my instagram )!

I could seriously eat gyros every day but have not attempted making them myself yet so here’s my next best thing! Ground lamb loaded with herbs and shallots to make a flavorful smash burger! Macros included too!

1 taco with lamb and 1/2 cucumber topping -
24g F - 10.2g CHO - 24.8g P

Lamb Burger:
1 lb ground lamb
1 tbls chopped dill and parsley
1 tbls diced shallot
1 minced clove of garlic
Salt to taste

1 small tortilla - I used the

Cucumber Topping:
2 tbsp diced cucumber
1/4 cup plain 0% greek yogurt
1 tsp dill
Salt to taste

Optional - Kalamata olives and pepperoncini

Mix lamb with all of the mixture ingredients and divide the meat into 4 equal portions. Spread a thin layer of the meat mixture over 1 tortilla. Heat small pan to medium heat. Place meat side down on hot pan and cook. Flip to crisp the tortilla. Remove from heat and add cucumber topping and Kalamata olives. Fold it and eat like a taco!
