This squash may not have come from my garden this time… but just wait until I grow my own. 😂🌱

It’s Taco Tuesday… but make it cozy 🤣🌮🥣

Tonight’s dinner: Cheesy beef Enchilada “Soupy Soup” 🧀

(“Soupy soup” because that’s what our youngest calls any soup and honestly… it stuck 😂🥹)

Ground Beef, cheese, beans, corn, tomatoes, and all the cozy taco night flavors in a bowl. Sometimes the throw-together dinners end up being the best ones 🤤

What’s everyone else having for Taco Tuesday tonight?! 🌮👇

🍅✨ Tonight I roasted tomatoes, peppers, red onion, and a whole head of garlic until my kitchen smelled absolutely unreal. 🧄✨

I blended it all into a homemade sauce, let it slowly simmer, then added homemade oven-roasted meatballs.

Was it easier to open a jar? Absolutely. 🤣
Would it have been faster? Definitely.

But there’s just something about taking simple ingredients and turning them into something with your own hands. About slowing down and remembering that good things don’t always have to be rushed… and neither do we. 🌿

Someday (hopefully soon 🤞🍅) I’ll be making this with tomatoes I grew myself from my little chaos garden, but until then this was a pretty magical practice run.

A little love, a little garlic, and a lot of pretending I’m an Italian grandma. 👩‍🍳😂🍝

Was supposed to be blueberry crumble muffins…
but my neck/shoulder said absolutely not scooping that today 😂
Dumped it in a pan instead and accidentally made blueberry crumble cake 🫐✨
