Oh the weather outside is frightful...at least in Texas it is! Thankfully my breakfast was delightful!

No need to venture out when I can make these yummy Oatmeal Banana Pancakes from using simple ingredients like bananas, oatmeal and almond milk all mixed up in a blender.

These Protein Baked Oats are warm, comforting and delicious on this bitter cold day!

Gather up the ripe bananas that I know you have in your kitchen right now, and a few simple ingredients, blend and bake for 20 minutes and you'll have a warm, delicious dessert....I mean breakfast. 😉

I was really trying to follow the meal plan this week but took a slightly detour tonight. I can't help it!!

What was supposed to be fish with veggies somehow turned into Chili Lime Fish Tacos. 😋 🤣

You know why?? Because this is my most favorite, most satisfying way to eat fish and it just sort of happened. That peach salsa...to die for!!

I got to eat all of this food today!! My low-carb day, including some carbs throughout the day like berries and salad! I try to keep my carbs under net 50g on these days, but still manage to get some yummy carbs in. I still love my .

One of my favorite ways to break my fast...avocado toast! But toast and low carb day don't go too well together...unless you make low carb toast!!

LOW CARB Coconut Flour bread!!

I fooled around with this recipe yesterday, changed it up a bit today, and made it work for me.

I only used 1 tbsp of dairy-free butter and switched to soy milk to make this dairy-free!

This toast only has 4.3g net carbs and 10g of protein!!! It whips up in 90 seconds in the microwave! (The tip to make it in a 5×5 glass container gets it in the shape of toast for ya!)

Top with eggs, guac/avocado for a delicious high-protein, low carb breakfast!

You asked, so here it is! The recipe for Shrimp Dumpling Lettuce Wraps or Rice Bowl.

This recipe is so delicious and easy to throw together. I enjoyed it over a some jasmine rice, added some thinly sliced radish to the pickled carrots and included some sautéed zucchini. I also topped it with additional spicy sriracha! Yum! Enjoy!

Look at these beautiful, tasty Monster Cookie Protein Balls! 😍😍 They are such a delicious treat. The family is gobbling them up and at 6g of protein each, it's a fantastic way to get in some protein.
