Chicken bacon ranch bowls over jasmine rice, a little something different for Mom, and no-bake chocolate cheesecake cups to finish it off. 🍗🥓🍚🍫

Easy dinner. Happy plates. Dessert handled. That’s a win in my book. 🤎

Tonight I’m keeping it simple with Chicken Bacon Ranch Bowls over jasmine rice — quick, filling, and easy to customize for everybody at the table.

Because some nights, dinner does not need to be complicated to be good. 💛

Weekly Update Wednesday 🤍

Today’s update looks a little different.

We’re on the way to Mom’s kidney doctor, so the kitchen, schoolwork, and everything else are taking a back seat for a bit.

This season has been a lot of appointments, caregiving, school, meals, and trying to keep life moving all at once — and some weeks, the update is simply that we’re still showing up.

That counts too. 🤍

Today, the apron is hanging up for a little while. ❤️

Our mom is having surgery today to have a peritoneal dialysis catheter placed.

We knew this day was coming, but knowing something is coming and actually living it are two very different things. After everything this woman has already fought through, watching her walk into yet another chapter of doctors, procedures, and treatments hits differently.

The Academic Apron has always been about more than food. It’s about real life happening in between the meals, the homework, the degrees, the messes, and the laughter. And today, real life looks like sitting beside our mom and being there for her as she takes another step forward.

So if things are a little quiet over here today, this is where my heart is. Please keep our mama in your thoughts as she goes through surgery and begins this next part of her journey. ❤️

One day at a time. One hurdle at a time. And somehow, we keep going. 🙏

Today, the Academic Apron is celebrating something much bigger than a meal, a recipe, or anything happening in the kitchen. ❤️

Today, my mama rang the bell. 🔔

After surgeries, appointments, uncertainty, exhaustion, radiation treatments, and more hard days than I can count, she officially completed radiation today. 🥹

There have been moments throughout this journey that have felt heavy, scary, overwhelming, and completely unfair. But today was different.

Today was joy.

Today was relief.

Today was a moment worth stopping everything for.

Watching her stand there smiling and ring that bell was a reminder that even in the middle of chaos, there are victories worth celebrating with your whole heart.

There is still more ahead, but today belongs to her.

To her strength.
To her courage.
To every day she showed up when it wasn’t easy.
To every treatment she completed.
To every battle she fought quietly that nobody else could see.

You did it, Mama. Radiation is COMPLETE. 🔔❤️

And today, we celebrate YOU.

Because sometimes “cooking through chaos” means putting the apron down for a minute and celebrating the person who keeps reminding you what strength really looks like. ❤️‍🩹

Cooking has always been more than just putting food on a plate for me. ❤️

It’s checking if everyone got enough. It’s remembering who likes what. It’s standing over the stove after a long day because feeding the people I love is one of the ways I know how to say, “I care about you.”

Some days the meal is Pinterest-worthy. Some days we’re just proud nobody burned the kitchen down. 😂 But either way, there’s love in it.

That’s really what the Academic Apron is about—cooking through the chaos, feeding my people, making memories, and finding a little bit of love around the table. 🫶🍽️

Degrees in one hand. Dinner in the other. ❤️

🍎 PACKED LUNCH vs. SCHOOL LUNCH 🍎

Okay parents, I need to know… are you packing lunches every morning, or are your kids eating school lunch? 👀

I feel like packed lunches give you more control over what they’re actually getting — but whew, coming up with something they’ll actually eat every single day can feel like another full-time job. 😂

Tomorrow's lunchbox lineup: fruit, veggies, a little protein, something crunchy, and of course a treat because… balance. 💁‍♀️
