One reason microgreens have become popular is that many varieties contain concentrated amounts of carotenoids and other phytonutrients compared to their mature counterparts.

Kale microgreens → high in lutein and beta-carotene
Broccoli microgreens → good carotenoids plus sulforaphane
Arugula microgreens → good lutein source
Red cabbage microgreens → carotenoids plus anthocyanins (the red-purple pigments)
Sunflower microgreens → more notable for vitamin E and minerals

What's a Carotenoids you ask? - Think of it this way, Carotenoids are natural plant compounds that act as antioxidants. Some, like lutein and beta-carotene, support eye health and immune function.
