Chili Cornbread Casserole
Delicious, hearty, and fantastic for leftovers!
You’ll need:
2lbs ground beef
1 large diced onion (white or sweet)
1 diced green bell pepper
1 diced red bell pepper
1 can each: pinto beans, great northern beans and black beans
1 large can diced tomatoes
1 can sweet corn
1 can diced green chilis
4tbsp minced garlic
2tbsp each: garlic powder, onion powder, paprika
4tbsp dark chili powder
1tbsp each: cumin and oregano
2tbsp olive oil
2-3Tbsp Worcestershire sauce
Salt and pepper
Corn bread mix (I added a diced jalapeno and a cup of shredded sharp cheddar cheese to the mix)
Add olive oil to Dutch oven, add diced onion and bell peppers, ground beef, seasonings, then beans and diced tomatoes, corn, garlic and chilis. Cook about 20-30m to let beans cook down.
Add cornbread mix to the top of the chili and bake at 400 until cornbread is browned and cooked through.

Delicious and refreshing...and so easy to make!
2 bunches of grapes (green and red is my fave)
1 cup whipped cream cheese
1 cup sour cream
1/2 cup sugar
1/4 cup brown sugar
1 tsp vanilla extract
1/4 cup crumbled pecans (optional)
Mix together cream cheese, sour cream, sugar, 1/2 the brown sugar, and vanilla (if possible, an hour or two ahead of time so flavors develop). Stir in washed grapes and chill.
When ready to serve, sprinkle remaining brown sugar (and pecan crumbles) on top and serve cold!

Just in time for Easter Brunch...Silly Goose Broccoli Salad
This broccoli salad recipe is one of my long time favorites and is ALWAYS a big hit. I don't think I've ever taken it to a picnic or party and not had at least one person ask for the recipe. This dish is perfect for picnics, baby showers, bridal brunches, and more! It's bright, fresh, delicious, and filled with fun summer flavors, but I've even served it at Thanksgiving to offer a fresh, lighter option instead of a regular salad.

Like many of my favorite dishes, this recipe can be adjusted to fit your liking. Don't like an ingredient? Skip it. Want to add nuts? Do it!

Here's what you'll need:
• 1 large head broccoli or 3-4 florets
• 6-8 slices chopped or crumbled bacon
• 6-8oz crumbled cheese (cheddar or blend)
• 1c halved cherry tomatoes (or similar)
• 1c Craisins
• 1/2c mayonnaise
• 1/4c sugar
• 1/4 - 1/2c balsamic vinegar
• salt & pepper
• 1/4-1/2c chopped red onion (optional)

Instructions
Chop broccoli in to bite sized pieces. Add bacon, cheese, tomatoes, Craisins. In 2-4c measuring cup or small bowl, mix together mayonnaise, sugar, balsamic, and salt and pepper (to taste). Pour over salad and stir through until well mixed. Cover and keep cold until ready to serve. Just before serving add in red onion.

Tips from Silly Goose:
• This recipe is great for leftovers! I like to make a large batch and have extra for a couple days.
• You can used prepared bacon but the flavor will be so much better if you use freshly cooked bacon, chopped in 1 inch pieces or crumbled.
• I do not recommend using normal shredded cheese for this recipe. Its too thin and just gets stringy and lost. Some brands offers an extra large shred that can be lightly chopped, or you can hand chop from a block. The flavor will be so much better!
• For the tomatoes, I like to get more oval shaped tomatoes and slice them long ways (top to bottom vs around the middle). It helps to keep the insides of the tomatoes more intact and I like how it looks.
• When including red onion, I recommend adding it just before serving so the flavor (and smell) doesn't take over the rest of the salad. If you're planning to have leftovers, you may want to keep the red onion on the side and add as needed.
• You can use balsamic glaze in place of the vinegar but back the sugar down (rec. by half) as its sweeter already.

Great salad side dish for this hot weather!

🍓Summer Strawberry Salad🍓
It’s hot out! This refreshing summer salad is the perfect dish to beat the heat! Fresh, sweet and tangy!
Here’s what you’ll need:
- 2 large cucumbers or English cucumber, thinly sliced
- Strawberries thinly sliced (about one standard package)
- 6oz sliced mozzarella cheese or Feta cheese
Dressing:
- 1/3c Olive oil
- 1/3c Red Wine Vinegar
- 1tbsp minced garlic
- 1tbsp fresh minced oregano (1tsp if dry)
- 1/4tsp salt
- 1/4tsp pepper
Directions
Mix dressing ingredients together so flavors develop. Slice vegetables and cheese, toss together in dressing and serve cold!
Flavors will continue to develop and make great leftover!
