Air Fryer French Fries

3-4 medium gold potatoes
1 tsp avocado oil
Salt
Black Pepper

Wash potatoes thoroughly. You can cut with the skin on or off. I did with the skin on. Cut potatoes into 1/2 in strips. If you want crispier fries cut them thinner.

In a strainer rinse the potatoes after they are cut. Fill a bowl with water and soak them for 15-30 minutes. Strain them again and refill the bowl of potatoes with water. Let soak for another 15-30 minutes. This is to remove excess starch. When the water is no longer cloudy no more need to rinse them. I find gold potatoes are the easier option for this process.

Once rinse lay out parchment paper with paper towel on top or just use a clean kitchen towel. Spread them out to let them dry out some. Usually 30-60 minutes.

Once done put back in a dry bowl. Drizzle with 1 tsp of avocado oil. You can skip the oil for crispier fries. Salt and pepper to taste. For four medium gold potatoes, I used 1 tsp salt and 1/2 tsp of black pepper.

Spread out fries in air fryer basket. Put air fryer on 385 degrees. Set timer for 20-25 minutes. If you stack any of the fries it may take a little longer. Mix them around about half way through cooking. Most air fryers have a pause function. Cook until golden brown and soft inside. Serve promptly while they are still warm. Enjoy!

Crockpot Carnitas

4-6 lb Pork Shoulder or Butt
1 Tbsp Salt
1 tsp Pepper
1 Tbsp Onion Powder
3 Tbsp Cumin
2 Tbsp Dry Oregano
2 Tbsp Dry Cilantro
2 Tbsp Smoked Paprika
1 tsp Chili Powder
1/4 tsp Cayenne
1 Medium Onion Sliced
2 Poblano Peppers Chopped
1 orange juiced
1 lime juiced
Optional: 1 cup Mexican Coke (healthier version with broth)
Optional: taco shells, burrito shells, taco/burrito toppings (lettuce, tomato, cheese, sour cream, avocado, refried or black beans, etc.)

In a large crockpot put in the pork roast. Mix together all the spices. Cover the roast in all the spices. Add in sliced onions, chopped peppers, orange juice, lime juice, and either the Mexican Coke or beef/chicken broth.

Cook on low for 8 hours until the meat easily pulls apart. If need faster cook on high for 4-6 hours. Once the meat pulls apart easily shred the meat. (I usually put on a sheet pan and shred with two forks.) Once shredded put back in crockpot and cook for another 30 minutes. Serve and enjoy with your favorite taco or burrito shells and toppings! Or simply eat as is!
