We love hearing from people that love the food! Thanks for the shout out Marcel Edwards!

We've been cooking, grilling and feeding large crowds but we dove into this opportunity head first learning new equipment and the recipes from the former owner on the fly!

We are very critical of our own food and we adapt, learn and document as we go!

The huge smoker cooks differently than anything we've dealt with before and its quite a chore to manage all of the manual controls through the day and night making sure that there is smoke and heat in the right proportions at the right time.

John - the chef, is also an industrial contractor that tunes industrial process furnaces which gives him a great understanding of the heat flow, and convection paterns of the smoker. He has plans to automate parts of the temperature control but doesn't want to lose the nostalgia of classic Texas Style smoking. He's very passionate about the blend of wood we use, the seasoning and improving the cooking methods for consistency and great flavor.

We've made some changes and we hope you'll love the food! We think it gets better every time! We appreciate the support of the customers that have stuck with us and hope you will continue giving us great feedback so we can continue to grow in the business.

Huge thanks to The Filling Station RKY for making a trade for a pizza since we're going to be out of town Monday and miss our weekly pizza night!

Let us know what you think of the sampler we sent over!? Everyone loved this huge Pizza!

We sent pulled chicken, baked potato, steak, ribs, smoked wings, a glazed chop, slaw and beans in exchange for a pizza and salad that doesn't fit in a regular cab truck 👀😊😋
