Homemade Chocolate Macadamia Nut and Coconut Ice Cream

Homemade chocolate ice cream with a Hawaiian twist. Great for upcoming luau pool parties too!

Difficulty: Easy

1 cup whole milk
2 cups heavy cream
2 tablespoons vanilla extract
¾ cup Macadamia nuts (chopped)
1 cup of shredded sweetened coconut
1/2 teaspoon salt
3/4 cup cocoa powder
½ cup granulated sugar
1/3 cup brown sugar (packed)

Servings: 6-8

Directions:

1. Prep ice cream maker according to package instructions (i.e., freeze main bowl prior).

2. In a medium bowl mix sugars, cocoa powder, milk, cream, vanilla, and salt. Refrigerate 2 hours to overnight.

3. Turn on the ice cream maker and pour in refrigerated mixture. Mix for 20 minutes. During the last 5 minutes, add coconut by the spoonful, followed by the nuts. Serve immediate or freeze another 2 hours or until desired consistency.

Biscuit Breakfast Casserole

This easy breakfast casserole is great for company to say the least, and can be prepared ahead of time. Even better for the morning after a night of debauchery during your sorority girl’s weekend to soak up the fun. Substitute the biscuits with a layer of croutons for a slightly lighter option.

Difficulty: Easy

11 eggs (beaten)
1 cup milk or heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Dijon mustard
1 lb. Italian sausage (cooked)
1 cup cheddar cheese (grated)
9 Pillsbury Grand Southern Biscuits (baked and crumbled)

Servings: 8-12

Directions:

1. Spray a 9x13 baking dish. Mix the eggs, milk, salt, pepper, and Dijon in a bowl until blended. Fold in the cheese. Evenly spread the biscuits on the bottom of the casserole dish and top with the Italian sausage. Pour the egg mixture over the casserole, cover, and refrigerate overnight.

2. Preheat oven to 350 degrees and Bake 45 – 55 minutes or until the top is golden brown. Serve hot.
