Zesty Zucchini Lasagna Rollups

A flavorful twist on classic lasagna, filled with zesty zucchini and creamy ricotta, all rolled up in perfectly seasoned tomato sauce.
– makes about 4 servings –

Ingredients:
2 large zucchinis
1 cup ricotta cheese
1/2 cup grated parmesan cheese
1 egg
1 cup marinara sauce
1 tsp garlic powder
1 tsp dried basil
Salt and pepper to taste

Instructions:
1. Preheat oven to 375°F.
2. Slice zucchinis lengthwise into thin strips.
3. In a bowl, mix ricotta, parmesan, egg, garlic powder, basil, salt, and pepper.
4. Spread a spoonful of ricotta mixture onto each zucchini strip and roll up.
5. Place zucchini rollups in a baking dish, seam side down.
6. Pour marinara sauce over the rollups.
7. Bake for 25-30 minutes until zucchinis are tender.
8. Serve hot and enjoy!

Savory ground turkey seasoned with taco spices, nestled in crisp butter lettuce leaves with creamy avocado, zesty salsa, and tangy sour cream. A healthy and flavorful twist on traditional tacos. – makes about 4 servings –

Ingredients:

1 lb ground turkey
1 packet taco seasoning
1 head butter lettuce, leaves separated
1 avocado, diced
1 small tomato, diced
1 cup salsa
1/2 cup sour cream or Greek yogurt

Instructions:
1. In a pan, cook ground turkey until browned.
2. Stir in taco seasoning and simmer and follow directions on taco seasoning package.
3. Spoon turkey mixture into lettuce leaves.
4. Top with avocado, salsa, and a dollop of sour cream.
