Don't sleep on the dark meat. 🍗

Thighs and drumsticks sometimes get treated like the “lesser” parts of the chicken, but they're anything but.

A 3-ounce serving of roasted chicken thigh is packed with protein and important nutrients, and it's also jam-packed with flavor! Dark meat has a little more fat than chicken breast, which helps give thighs and drumsticks their characteristic rich flavor and juicy texture.

We believe there's value in the whole bird, and we LOVE the flavor-and-nutrition double-whammy drumsticks and thighs literally bring to the table.

🚨 The Copper Branch Farm Chicken Spa & Resort is OPEN!

After graduating to pasture and days of 100°+ heat, our girls are officially getting the full Copper Branch Farm spa treatment.

☀️When temps hit 95°+ (as it has been for quite a few days now), we mist the birds to help keep them cool and comfortable. Their feet are highly vascular, so cooler ground can also help them shed some of that Texas heat.

And we’re finally headed back to the 90s! (Who knew we would be excited about 90° heat 🥵🌡️?)

Because sometimes, pasture-raised chicken comes with resort amenities 😅🤣

We’ve added Hereford pigs to the farm, and they’ve officially been turned out on pasture! 🐖

These pigs are a little different from what you might picture when you think of commercial pork. Herefords are known for producing beautifully marbled pork, which means tender, juicy, flavorful meat that’s worth waiting for.

And we’ll be doing plenty of waiting because they’re a slower-growing breed, but around here, we’re not in a hurry to take shortcuts. We’d rather give an animal time to grow properly, move around, forage, and live the way we believe farm animals should.

The pigs will be rotated onto fresh pasture regularly, giving them new ground to explore while helping us manage the land responsibly.

That's one of the things we love about farming: nothing really exists in isolation. We're building a farm where all of those pieces work together: pasture-raised chickens, healthy soil, gardens, flowers, and our busy honey bees. 🌱🐓🐝
