It's been a little while coming, but we're finally at a place where we can get a small supply of Mangalitsa pork and American Black Belly Lamb to market. Most SJ locals know our farm as the "Billy Waite Farm", and we hope to honor Billy by keeping the farm running as long as we can and also give a nod to our Danish ancestors with a new name that means a lot to us. We're betting ole' Billy would be pleased that we're finally getting some irrigation sprinklers in place on that sloped hillside that he so meticulously flood-irrigated.
