Καλό Μήνα, happy JUNE 💚🌱

I feel a lot like my garden lately.

It’s quiet at first, like the garlic I plant in the fall. Garlic sits beneath the soil for months and months unseen. Then one day green shoots begin to emerge, a reminder that growth was happening even when no one was looking.

Then around the shoots of garlic, herbs and plants that dropped seeds the year before start sprouting, bringing life back to spaces that seemed empty.

That’s how this season of life feels to me. Ideas are sprouting, changes are happening, and things are really taking root.

So here’s to June and your reminder that some seasons are for planting, some for tending, some for growing, and some for harvesting. I hope you enjoy whatever season YOU’RE in. xo

MEAL PREP MONDAY 15/52 🐟

I’ve been making a salmon bowl easily once a week!you can mix and match them with whatever you have, but this combo has been on repeat lately.
Sweet + spicy salmon with crispy roasted sweet potatoes and my current salad hyper-fix: carrots, cucumber, cabbage, kale, and pomegranate. It’s fresh, holds up all week, and never gets boring.

this bowl is packed with protein, fiber, and healthy fats to keep you full, energized, and feeling good. :)

Ingredients
4 salmon filets (about 4–6 oz each, skin on or off)
2 tablespoons honey
1–2 tablespoons chili oil or chili crunch (adjust to heat preference)
2 tablespoons tamari
1 teaspoon sesame oil
1 teaspoon grated ginger
2 garlic cloves, grated
Salt and pepper
Instructions
1. Preheat oven to 400°F.
2. Whisk together all sauce ingredients. Taste and adjust (more honey for sweet, more chili for heat).
3. Pat salmon dry and place on a lined sheet pan. Season lightly with salt and pepper. Spoon or brush sauce over each filet.
4. Bake 12–15 minutes, depending on thickness, until the salmon flakes easily and the top is caramelized. Optional: broil for 1–2 minutes at the end for extra char.

Greek Girl Garden Summer is back 🌱
The first harvests are finally here: pea shoots, sweet peas and chive blossoms.

To celebrate the gardens return I turned some pickings into two simple garden toasts on my homemade sourdough:�-Chive blossom butter + smashed pea toast �-whipped lemon ricotta + pea shoot toast

This is proof that the best meals don’t need much… just a few ingredients picked fresh from the garden.

MEAL PREP MONDAY 14/52 🍜

(Making this as an actual post today vs a reel so I hope you like)

These soba noodles are one of those meals I’ve been making for years but somehow never actually wrote down. I started making them back in college because they were easy, affordable, flexible, and perfect for feeding a house full of hungry brothers.
Now almost 15 years later, my younger brother texted me asking for the recipe…which made me realize I never had one written down 😅

Look at these scones 👀

learned how to make scones, found out how easy they are to make, and baked them outside at and now I’m hooked.

Here are some tricks I found:
Refrigerate your dough!!

Place your cut dough closer together in the baking dish so they rise taller

If baking in a Dutch oven like this, place parchment down and rotate the Dutch oven halfway through

Don’t overwork the dough… keeping it shaggy and light helps the scones stay tender

These yogurt marinated chicken bowls are one of my favorite meal prep lunches because they stay fresh, flavorful, and actually exciting to eat all week long!
