Hello, and welcome to Saisei Cocina. I’m Chef Lynn Blair, owner/operator and creator of the Saisei Cocina line of products.
I launched Saisei Cocina in 2025 in conjunction with Dr. Sweeney of San Antonio Family Integrative Health with the goal of bringing wholesome dips, spreads, and specialty products that met the dietary needs of her patients, but my story actually starts in 2019 as a patient myself. Having been let down by conventional doctors at every turn, I arrived at Dr. Sweeney’s practice feeling sick and tired. I was like most out there in that I didn’t give much thought to the foods I was consuming, only for testing to reveal a long-term Celiac pattern along with casein immunoreactivity.
At the time, I had built up a successful career in the crane and rigging industry as a heavy lift engineer. The thought of entering the world of culinary arts was nowhere on my radar. As I began my transition away from pre-packaged processed foods and started cooking from scratch to meet my new dietary requirements, in addition to getting my health and vitality back, I quickly found my life’s passion. I took a risk, left my established career, and attended The Culinary Institute of America at San Antonio, where I graduated first in my class in December 2022.
After graduation I worked in traditional restaurants and educational institutions, but my vision for my own product line never waned. Much time was spent after hours developing and perfecting my recipes. With the help and feedback from my friends and family, I was able to create a handful of products that will satisfy even the most discerning of palates. I craft each batch with the utmost pride and attention to detail, ensuring precise consistency between batches and that only the finest ingredients make it into the bottle. All of my products are 100% plant-based and gluten-free, without any artificial colors, flavors, or MSG.

Why “Saisei Cocina”?
I selected the name Saisei Cocina as symbolic of my heritage, health journey, and the rich history of San Antonio. My great-grandmother immigrated to the United States from Japan, making me one-eighth Japanese. Saisei is the Japanese word for rebirth, which is really what my health journey beginning in 2019 was all about. I felt like a new me, reborn if you will. The word Cocina is the Spanish word for kitchen, paying homage to the rich Latin history of San Antonio.
My home kitchen really is my own personal kitchen of rebirth, and it is my hope that it can also be a source of rebirth and renewal for you on your own personal health journey.
