Had to share this awesome thank you note from a great client that myself and my helper Maggie cooked for a few weeks ago. I have been cooking Gluten Free for clients for years now and am glad that I could please Gluten Free and non Gluten Free clients palettes!!!

We really loved your cooking and you made the food situation go from a source of stress (and even anxiety) to something that we looked forward to each day. As you could tell, the family loves their food and they aren’t easily impressed. However, you certainly managed to impress everyone and after the first lunch even my father-in-law was praising our decision to have you cook for the group! I was especially impressed with how you managed to create a gluten-free menu that worked perfectly for those of us with celiac disease, but I don’t think the others even knew they were eating gluten-free!

Sorry for the delay..these guys are so easy to make and delish too..you can swap any fruit jam( Sugar free) if you wanted a different variation.
RECIPE: GLuten Free, Dairy Free, Sugar Free Blueberry Thumbprints
1 cup of fresh blueberries ( or any berry)
1 Tbsp Arrowroot powder
1 tsp lemon juice
2 Tbsp raw honey
Place all ingredients in a pot. Heat over low heat. Stirring occasionaly. Mmash the blueberries and remove from the heat when the mixture has thickened.
2 eggs
2 Tbsp vanilla
1/4 cup coconut oil( virgin or extra virgin)
1/8 tsp salt
1/3 cup coconut palm sugar
1 cup almond meal or flour( i used Trader Joes)
1 cup GF flour Mix( cup 4 cup, or Trader Joes GF flour mix)

Heat oven to 350 degrees F. Mix the coconut oil in a mixer with paddle attachment like you would mix butter for cookies. Mix till fluffy, add the egg one at a time, vanilla, and salt. Mix. ( will look lumpy..its OK!) Add the coconut palm sugar and 2 types of GF flour. Line a baking sheet with parchment. Roll the dough into balls the size of a quarter or a bit bigger( should yield about 24 cookies). Place the balls on the cookie sheet 1 inch apart and indent with your fingers or thumb( duh..thumbprints!) . Place about 1 tsp of the jam filling into the middle of each indented cookie.
Bake for 10 minutes. Let cool on the cookie sheet for a few minutes then can be stored in an airtight container.
**** If you want to save some time you can just buy your favorite sugar free jam and put that in the cookie .

Had to share this recipe that I made today for a client that needed something sweet with out the sugar or the eggs, dairy etc. This is a healthy option when your craving a rich creamy dessert!

Chocolate “ Mousse”- Vegan
2 ripe avocados
1 cup de pitted and soaked dates( medjool)
¾ cup raw cacoa powder
½ cup of Maple Syrup OR Agave OR Raw Unfiltered Honey
½ tsp vanilla bean paste
Coconut Cream- Whipped for topping- ( optional)
Soak Dates for 30 minutes. Drain ( save liquid for future smoothies—no sugar substitute and added sweetness)
Add all of the ingredients to a food processor or blender and whip together.
Refriferate for a half an hour then serve. SO GOOD and NO SUGAR OR DAIRY! You cant even taste the avocado and the texture is like a rich chocolate Mousse.
