Lots of questions on this baby, those of you that have tried my cooking know I love bowls and the more that’s in it the better 😊. This one is pretty simple since honestly I haven’t gone to the grocery store in quite some time now. And the reason I don’t go it’s because I try my best to not get new produce until I finish the one that is probably about to go bad. This also pushes me to be creative on every meal. Cooking at home is so different than cooking in an industrial kitchen, not only because of the equipment but and industrial kitchen usually has a lot more ingredients available and let’s face it there’s only so much I can fit in my baby kitchen.

All the components on this bowl are pretty straight forward, nothing you probably haven’t heard of, and that’s what’s easy about this recipe. I’ll be posting a small tutorial on this so stay tuned! ✨

Ingredients you need for this
1 cucumber
1/4 avocado
2tbsp dried wakame seaweed
2tbsp toasted sesame seeds
1/4 cup cooked sushi rice
1tsp cane sugar
3tbsp rice vinegar
2tbsp toasted sesame seed oil
1/2 cup soy sauce
1 orange
2 limes
1/2 serrano pepper
1tbsp mayo
2tbsp sriracha
2tbsp furikake ( Japanese seaweed seasonig)
1 pinch togorashi ( Asian “Tajín”)

Growing up and watching my grandma make this recipe a million times, it’s a vivid memory that I’ll cherish in my heart forever. I always have fresh salsa at home ready to pair with any dish. 🌶 here’s the recipe that’s so simple and incredibly delicious 🤤

Salsa de Molcajete:
5ea medium roma tomatoes
7ea medium jalapeños peppers
4ea serrano peppers
1/4ea white onion
1ea medium size garlic clove
1 tbsp salt
1/4 cup water

If you have a grill, even better! I used my cast iron to char my tomatoes and peppers. If you don’t have a mortar and pestle like mine you can do the same steps but with your blender, and it tastes just as good!

Filipino Chicken Adobo became one of my favorite easy comfort dishes about two years ago. Throughout my career I’ve had the pleasure to explore different cultures and work with many people that have had an impact in my cooking and that I can happily say I’ve learned from. I love simple home cooking, food that makes you think of good memories, places or special people in you’re life. Food that brings you back to a special moment.

Here’s my recipe, I hope you’ll enjoy it as much as I do. Don’t forget to tag us if you try this at home .

1lb chicken (your choice) I used breast.
1/2 cup soy sauce (low sodium)
1/4 cup rice vinegar or white vinegar
2tbsp cane sugar
2tbsp whole black peppercorns or coarsely ground peppercorns
5ea whole garlic cloves
1/4 julienned onion
4ea fresh bay leafs or dried

Mix all ingredients in a stainless steel mixing bowl and let marinade for 30 min. Than add everything in a pot or a crock pot and cover, cook on medium low heat for 45 min until chicken is nice and tender. Stir a few times during those 45 min to avoid sticking to the bottom. Serve on top of sticky white rice.

Cooking at home is great, until you have to do the dishes.... right?! Even tough that’s my least favorite part, I enjoy it a lot. One of the things I highly recommend to all home cooks is to meal prep during the week to reduce the time you spend in the kitchen. In this case I cooked two cups of quinoa which was enough for 3 days and it was prepared in 3 different ways. Here’s another idea on how to serve quinoa.... you can look at step by step preparation on my “fried rice” highlight on my IG. Recipe is the same I only changed the grain to quinoa.

Easy and delicious way to switch up your favorite seared piece of fish.

This time I did 1/2 cup plain quinoa as a bed, followed by sautéed green beans a seared piece of white fish and a citrus salsa, full 30 min meal. Here’s the ingredients for the salsa:
.
2ea oranges (only segments) or you can also do rounds.
2 tbsp julienned red onion
1 tbsp fresh dill picked
1 pinch ground black pepper
1 pinch salt
1tbso extra virgin olive oil

Mix everything in a bowl and top your fish. Voilà!!

This combo has to be one of my favorites, lately I’ve simplified my cooking a lot and I blame it on our beautiful weather. San Diego is getting pretty warm, and it makes it harder for a lot of us to stand in the kitchen for too long.

That’s why I like to share some of my daily meals, this one was paired with a seared piece of Wild Salmon. 20 min quick meal.
.
.
.
Salad
3 hand fulls baby kale
1/4 red onion sliced
1/2 cucumber sliced
1/2 avocado fanned
1/2 cup heirloom cherry tomatoes
1/4 feta cubed
Dressing
1/4 cup extra olive oil
1 tbsp honey
5 tbsp apple cider vin
1tbsp dried oregano or fresh
.
Mix all dressing ingredients with a whisk in a small bowl and pour on top of salad. This dressing will last up to 3 weeks in your refrigerator.

Because this salad deserves it’s own post! I love the colors, flavors and textures in this salad. Can we agree on that!? Just because of that I’ll be sharing the recipe!!! Be sure to tag us if you make this at home.

Ingredients:
1ea cara cara orange
1ea blood orange
1ea avocado
1/4 cup caramelized walnuts
1/4 cup feta cheese cubes
3 hand fulls mixed greens (or any dark leafy green)
Dressing:
1/4 cup tahini
1ea garlic clove
1tbsp olive oil
1tbsp chopped parsley
1tbsp honey
1/2 cup orange juice
1tsp Himalayan salt
1 pinch ground black pepper
.
Place all ingredients in a blender and blend 1 min until all ingredients are combined. Enjoy!

Tuna Ceviche✨

Simple recipes are everyone’s favorite and this one is definitely one of my favorites. Fresh 30 minute meal, perfect for this perfect weather.

2 ea cans of Tuna (in water)
2 medium diced Roma Tomato
1/2 medium diced Red Onion
1ea medium diced Cucumber
1/2 bunch finely chopped Cilantro
1ea small diced Serrano Pepper
1 1/2 tbsp salt
1/4 cup Clamato Juice
1/2 cup Lime Juice
2tbsp Olive oil
.

Mix all ingredients together in a bowl and Voilà!!!! Serve on a corn tostada with sliced avocado and your favorite salsa.

Huevos Rancheros Verdes ✨

Salsa:
10ea medium tomatillos
6 ea Chile güeros
4 ea Serrano peppers
1/4 yellow onion
2 ea garlic cloves
1/2 bunch cilantro
Simmer peppers and tomatillo in water for 10 min, strain and let cool for 15 min. Place the rest of ingredients in blender with the peppers and tomatillo and blend until smooth.
Plating:
2ea lightly fried tortillas
2oz mozzarella cheese (or any melting cheese)
2ea lightly seared turkey ham
2 ea eggs any style (traditional sunny side up)
Topped : Queso Cotija & Cilantro Leaves .
