Würziges Beef Vindaloo
Recipe
Ingredients:
1 kg (2 lb) beef chuck, cut into cubes
4 tbsp vinegar (rice vinegar or mild white vinegar)
4 cloves garlic, minced
1 tbsp fresh ginger, minced
2 tbsp oil (vegetable or neutral)
2 onions, finely sliced
1–2 tbsp vindaloo curry paste (store‑bought or homemade) or spice mix of chili powder, cumin, mustard seeds, and fenugreek
2 tbsp tomato paste
1–2 tsp sugar (optional)
1–2 dried red chilies (optional, for extra heat)
500 ml (2 cups) beef stock or water
Salt, to taste
Fresh cilantro (coriander) to garnish
Directions:
In a large bowl, combine the beef cubes with vinegar, minced garlic, and ginger; marinate for at least 1 hour or overnight in the fridge for deeper flavor.
Heat oil in a heavy pot over medium heat. Add sliced onions and sauté until soft and turning golden.
Stir in the vindaloo paste or spice mix and cook for 1–2 minutes until fragrant. Add tomato paste and sugar (if using), and mix well.
Add the marinated beef (discard excess marinade if desired) and stir to coat with the aromatic spices.
Pour in the beef stock or water and add dried chilies (if using). Bring to a boil, then reduce heat, cover, and simmer 1–1.5 hours until beef is tender and sauce has thickened.
Season with salt to taste. Serve hot over basmati rice or with naan bread, garnished with fresh cilantro.
