🚨 So… I’m pivoting this page to Tables with Tina. Less food styling and more life - more from my dining room table, from restaurant tables with friends, and the tables/spreadsheets I use to organize the chaos.

After the first strong year with Egg Marks the Spot, I found myself overwhelmed with work, coming out of lockdowns, and trying to live up to the expectations I set for myself as this persona. I stopped updating the website and posting on social, but I didn’t stop cooking and baking. The post-lockdown world brought me more community, more opportunities to share my passion for food in the real world. Ultimately, building community is why I started Egg Marks the Spot and I hope to continue that with Tables with Tina, both online and in SF if you’re here! I’ll still bring the occasional FilAm flavor, food science tip, or fact, but this time around I’m shaking the “shoulds” and having fun. Thanks to everyone thats been riding with me since the start 💖

2022 - I fell off the IG train, but threw some pretty mean dinner parties IRL. Learned to grow my own mushrooms, make cheese, and laminate pastas.

Favorite weeknight recipe discovery was Italian sausage and chicken tortellini soup.

It was an honor to bake for the for Noche Buena Christmas Cookies. Noche Buena, "good night," refers to the meal enjoyed after Midnight Mass on Christmas Eve. We made ube white chocolate chip cookies and Peanut butter muscovado cookies. These sweet treats featured ingredients from the Patikim Boxes, with proceeds from this fundraiser supporting Gawad Kalinga's Kusina ng Kalinga project, an initiative to end the hunger of Filipino children. You can still catch the Kulinarya Live! on their Facebook. I'll be snacking on these with my naughty tsokolate all weekend! ⁠⠀

I had the honor of baking Christmas Cookies for the Filipino Food Movement's Kulinarya Live. "The Filipino Food Movement is dedicated to preserving, promoting, and progressing Filipino cuisine in North America & around the world." Need Noche Buena ideas? Arroz Valenciana is a classic. Filipinos adopted this from Valencian Paella, a dish from the Coastal Spanish town of Valencia. The Spanish use a lot of seafood and Filipinos often incorporate chicken, but you should feel free to be WILD. Add whatever meats, spices, raisins, and veggies that spark joy! I looove the crispy rice bits at the bottom of the pan and soaking my eggs in a red onion pickle brine for color and tang. ⠀

Recipe: ⠀5 lb longganisa⠀5 lb chicken thighs, diced⠀25 lb chorizo de bilbao⠀
1 tbsp coconut oil⠀
1 medium onion, diced⠀
5 cloves of garlic, coarsely chopped⠀
1 tsp smoked paprika⠀
1 tbsp curry powder⠀5 tbsp turmeric⠀
Pinch Saffron⠀
1 cup sticky rice optional⠀
1 cup jasmine rice⠀
1 can coconut milk⠀
2 cups water⠀
1 red bell pepper⠀
2 medium-hard boiled eggs, sliced (boil for 9-10 min)⠀
Optional: shrimp⠀

1. Heat a large pan, at least 12 inches in diameter,on medium high heat. Heat 1 tbsp of vegetable oil.⠀
2. Once oil is shimmering, brown the longganisa and chorizo. Remove from the pan.⠀
3. Brown at least one side of the chicken thighs in the longganisa oil. Remove from the pan.⠀
4. Add 1 tbsp of coconut oil and sautee the onions until softened. Add the garlic and sautee until golden brown. Stir in the spices to bloom them in the oil for 1 minute.⠀
5. Add jasmine rice, sticky rice, chicken, longganisa, and chorizo (optional shrimp) to the pan and stir it in with the spices until well combined, about one minute.⠀
6. Pour 2 cups of water and 1 cup coconut milk evenly over the top of the rice.⠀
7. Cover and reduce heat to medium-low. Cook for 20-25 minutes.⠀
8. Remove the lid and add bell peppers. Cover again and steam for an additional 5 minutes.⠀
9. Serve with sliced egg on top. The rice at the bottom of the pan is the best - crispy!⠀

Pair your lychee bubbly with cured meats and cheeses. The star of this charcuterie board is the Queso de Bola (edam cheese). Many of our foods have Chinese or Spanish origins, but Queso de Bola is actually a Dutch cheese that made its way to the Philippines on Galleons when the Dutch fought maritime battles with the Spanish in the 1600’s (I learned a ton about the history of Queso de Bola in a piece by ). To add more pinoy elements, I recommend biscocho, proscuitto or ham, and even dilis paired with bleu cheese! ⁠⠀
